Vegan Burger & An Evening Out

What a wonderful and relaxing day, not quite as indulging as last Saturday, but a productive and fun day with hubby. I started it with a Vega smoothie for breakfast before hitting the gym for an hour, then I was starved for lunch around 11 AM. I broke out a package of Falafel Sunshine Burgers I forgot about in our freezer to get creative with.

I love how simple these are to cook, just heat with a little oil stove top flipping once.

I love collard greens, but always forget to buy them when grocery shopping. So I was thrilled to get another bunch in this week’s CSA box. I spread a little Veganaise on a collard wrap.

Then layered honey mustard and relish on top.

Then I added Daiya Cheddar Shreds to the cooking Sunshine burger which didn’t melt as mush as I thought they would.

Then I just plopped the burger on top of the collard leave with condiments and made a Sunshine wrap.

Served with leftover salad from last night for a quick and tasty lunch.

It’s been awhile since I’ve had a Sunshine Burger and forgot how great they were, even my dog was begging for pieces. Mixed with the Daiya shreds and condiment flavors made this a fun treat for lunch.

Later we stepped out to catch a movie – Drive Angry in 3D. While it was violent and gory, it was also way over the top with a lot of action and cool effects, never boring. I enjoyed it and hubby really liked it, a fun romp to take your man to. And I may or may not have indulged in a package of Red Vines during the movie, shared with hubby of course. Back in the day, I used to be a Twizzler’s fan, but have been avoiding them since going high-raw and vegan, plus I wasn’t sure if Twizzlers were vegan. After reading the The Vegan Girl’s Guide to Life, I learned that Red Vines are vegan friendly and have a simple list of ingredients, so I decided to indulge a little and it was great. No worries, I’m not buying a Costco-sized tub anytime soon. :-)

Then we stepped out for a relaxing dinner after a little shopping at the mall. Yes, I’m lucky, I have a hubby that actually likes browsing around the mall with me. Granted, we browsed at Crate & Barrel, William Sonoma and stores with items we both liked, I wouldn’t drag him around woman’s clothing departments unless he was picking something out at Victoria’s Secret. Anyway, after all that walking, we were ready for a little dinner and since Il Fornaio is next to the mall and one of our faves, we stopped in for dinner. Yeah, we were just there, but it’s a great place with reasonably priced vegan options, a great wine list, cozy atmosphere and amazing service. This time I didn’t have my DSLR and was too relaxed for taking food pics anyway, but I snacked on plenty of the amazing olive and rosemary breads – a guilty pleasure and I need to carb up for tomorrow’s long run, right?

And I got the same vegetarian pizza as last time without cheese because it was so good and so much food for $13.

And I have half of this pizza sitting in my fridge that maybe I’ll get creative with a Daiya mozzarella shreds for dinner tomorrow night – Mmmmm.

    vegenaise with layered honey mustard and relish on top = my kinda topping!

    i have a vegan slaw dressing + horseradish + relish. Not really a “recipe” per se but combining condiments. And it’s tasty.

    I have never had a sunshine burger, everyone raves about them. I am too cheap to pop for them :) I have morningstars on standby if i ever get in a jam.

      You’ve gotta try Sunshine burgers at least once. :-) Yeah, they’re not cheap, but tasty and easy to cook and I love the simple list of ingredients. Whole Foods has them on sale a lot it seems like, check next time you’re there.

    Sunshine burgers, daiya, and veganaise are some of my favorite things :) This looks like a great combo! I do like to chunk up the burgers and put them on salad on occasion.

    ya know, i don’t think i’ve had sunshine burgers come to think of it. i’ve had pragers, but not that one. i need to gt to wf to purchase them!

    and that pizza looks amazing!

    You really can’t go wrong with Sunshine burgers! I love all of them– but I’ve yet to try the falafel kind!

    1. You could put a lid to capture the heat, which would make our products melt
    2. Put it under a 350 degree broiler for a minute or two
    3. Pop it in the microwave for 1 minute
