Farm Box Challenge & Lentil Soup

Blah, what a wet and cold day. And a busy day at work, so relieved tomorrow is Friday. If this week had a theme at work, it’s crashing hard drives because I’ve spent a lot of time scrambling to recover data from 4 laptops that users didn’t back up. If you have a laptop, make sure you have a good backup solution for it. External drives are cheap now and backup services are pretty cheap if time is an issue.

Anyway, I’m also looking at a busy weekend with doing a CIM relay Sunday. The weather forecast for Sunday has been an emotional roller coaster all week – first it’s gonna rain, then not and now the forecast is showing rain again. Great. Oh well, should be an interesting experience. For this race, I’m not looking for major PRs, just participating in a team event with my sister and two other runners who are looking for drive to stay active and I’m happy to participate in that effort. I listened to my sister’s horror stories of nearly slipping on ice at the water stations last year, thankfully it won’t be that cold this year. But it will still be cold and a new challenge for me.

Despite the icky weather, I had a nice salad for lunch dressed with Gena’s zucchini hummus leftover from earlier this week and topped with more nutritional yeast. The hummus made a great, thick and tangy dressing.

Then snacked on some edamame, yum.

When I got home from work, I found another CSA farm box on our front porch loaded with goodies.

And this box’s challenge ingredient is…

But I completely forgot that was this week and already stocked up at Trader Joe’s earlier. I could barely fit all the greens in our fridge, my smoothie is gonna be extra green tomorrow morning! Needing to use some veggies up quick, I threw together a monster green lentil soup for dinner with butternut squash, celery, leeks, onion, tomatoes loosely following the spices from this recipe.

It was very good, hearty and filling, hitting the spot after a yucky day. But I have enough leftovers for a few meals now that maybe I should try freezing.

But now it’s time to hit the gym to sweat off the stresses of the day, have a great evening!

    In this day and age with our music, photos, data and lives all on our computers…how does anyone not have an ext drive?! they are like $150 bucks and time to do it is not an excue…the machine will auto-backup if you set it. Dont get this!!?? wow… but im sure im preeching to the choir :)

    the csa box AND the tj’s run. god this always used to happen to me when i did a csa box. i couldnt hold out just one more day and would do a groc run and then have overflowing produce! from famine to surplus which was the only thing i hated about the csa.

    love this week’s mystery item…and i have no idea what it even is! :)

      Yeah, hard drives are so much bigger now and people store tons of music, pictures and videos that’s just that much more to back up. I have two external drives, one for important back up and the other for not-so-important stuff. :-)

      I’m not sure what it is either, maybe a broccoli cauliflower hybrid?

      Not sure yet either, but I got two of them and thinking of dumping one on my mom to see what she does with it. :-P

    I was hoping the comments would enlighten me as to WHAT that produce is, but no such luck :)

    I love edamame & nutritional yeast, so those are good in my book :)

    Lentil soup is about one of the only soups that I really enjoy, it has been WAY TO Long since I have made it, maybe soon ;)

      I am becoming a lentil addict because they cook so quick in dry form making them perfect for quicker weeknight dinners. There are so many varieties of lentils and I’ve yet to try them all.

    Gosh, this soup looks fantastic. Since I’m freezing in Scotland this winter, I want to add more soups to my diet. I always get so ‘lazy’ and opt for easy steamed veggies or grilled veggies and salad, but then I am often left unsatisfied with a cold tummy.
