So sad this weekend is almost over especially if the looming work week is going to be anything like last week – ick! Over the last week, I’ve been noticing more face breakouts here and there again I’m not thrilled about! So I’ve been researching possible causes and it may be related to my high whole raw nut intake and that being a side-effect because they’re harder to digest. So this week I’m going to take it easy on nuts and add more beans and avocados instead to see if my skin settles down. That or dye my hair black and pretend I’m in junior high school again!

Yesterday I tried something new in my smoothie.

TJ’s frozen pomegranate seeds and they were great! Added a nice, sweet flavor – not gritty at all.

We decided to have lunch at home before going on a hike, so I threw together a monster salad.

Spinach, tomato, cilantro, rosemary guacamole and lentil salad (chilled leftover lentil stew :-)). It was my first time trying rosemary guac, not a combo I would have expected, but it was great.

After we packed the pup and headed out for a hike at Hidden Falls where the weather was perfect, not too hot, sunny and a nice breeze. So naturally, the trail was packed with many families, dogs and even horses. Still a great time and opportunity for me to work my amateur photography skills.

It was about a 3.2 mile hike, not too strenuous, but my butt is a little sore from all the hills. My dog did really well for a chihuahua, she had no problems scaling rocks and navigating steep slopes even though many big dog owners laughed at her. :-P The falls were beautiful, plenty of gushing water and people swimming in the river, lots of snow run-off this year.

When we got some, I made a monster marinara plate for dinner.

Carrot ribbons, zucchini noodles topped with raw marinara sauce and Italian Nut Parm topping, a very filling combo!

    I LOVE pomegranates, but I’ve never seen the frozen seeds before– yum!

    could you taste the crunchy part of the pom seeds? I love the frozen fruit section of trader joes (my freezer pays much homage to it)

      Hi Katherine, I couldn’t taste the crunch of the seeds, but I think the Vita-Mix played a huge role in that. :-)
