Whew, tomorrow is Friday! I am ready for it after this busy week. Because often I’m the only one eating the raw dishes I do for dinner, I end up with plenty of leftovers and try to get creative with them. For lunch today I have Basil Nut Broccoli from last night and Suzanne’s Worldly Rice from the night before with leftover nacho hemp dipping sauce for a mini salad and created quite a lunch.
Not bad and very filling!
For dinner I got creative by throwing almonds, carrots, zucchini, cilantro, celery and miso into the food processor to make a pate seasoned with cumin and chili powder and serve in collard wraps.
It made a great combo that was fast to throw together and I have leftovers for lunch tomorrow. :-)
