Basil Nut Broccoli Recipe

I’m proud of myself – I actually remembered to wear green today and made my breakfast smoothie extra green thanks to kale, spinach and hemp protein powder.

And later indulged in another green drink.

I think this one is my favorite flavor so far.

Amanda Seyfried’s wonderfully insightful comments on her raw diet from Friday is getting more attention.

“If I didn’t run and work out, there’s no way I would be this thin,” Seyfried told Glamour magazine. “But I have to stay in shape because I’m an actress. It’s f****d up and it’s twisted, but I wouldn’t get the roles otherwise. If I’d been a bit bigger, I don’t think they would have cast me for ‘Mamma Mia!'”

Ugh, this is a horrible misrepresentation of the raw diet! Clearly she’s not following the diet with a goal of improving her overall health, but just depriving herself for weight management raw diet style. Awful!

Anyway, I did create another broccoli dish in keeping the green theme today and furthering my obsession with finely chopped broccoli sides.

Basil Nut Broccoli

  • 4 cups roughly chopped broccoli
  • 1 cup basil leaves
  • 1 cup Brazil nuts
  • 2 cloves garlic
  • 1 tsp. pink salt
  • 2 tbsp. nutritional yeast

Place all ingredients in a food processor and chop to desired texture. Warm in dehydrator at 115 degrees for 30 minutes if desired and enjoy. Makes 4 servings.

The Brazil nut oils blend the broccoli, basil and garlic flavors together nicely while keeping the side very moist and smooth. It also makes for a satisfying side that filled me up quickly. Hubby enjoyed this as well, it makes a great green rice or mashed potato replacement.

    amanda seyfriend = SAD! bummer, i used to think she had a refreshingly healthy body for hollywood, guess not.

    I adore Amanda Seyfried so I could be a little jaded… but I think it’s refreshing that she is being honest about her diet (unlike most hollywood starlets) even if it is a deprivation diet and not a good representation of the raw foods lifestyle.

    I have been experimenting with adding more raw foods in my diet, fun salads, green smoothies, less meat, etc… and I have to say that I am intrigued by all of the creative raw recipes that I have come across.. your basil nut broccoli included :) xoxo

    I read about it on Gena’s blog and think it’s sad that she has no idea about a healthy raw diet. She makes good and healthy food sound like it’s something bad. Well, she’s missing out but nevertheless it’s good to hear an honest comment by a Hollywood actress. Most of them say that it’s the genes.. Ha! As if..

    Love that you remembered to wear green and eat green! I agree with how awful it is when people use something healthy like eating raw to be stick thin and not healthy.

    Yeah, big UGH to Amanda Seyfried! She is propagating the very image that raw needs to avoid. Total setback to the dietary style itself! Oh well, we can only take care of ourselves at the end of the day–at least I know I’m smarter than she is. Hell, I use raw as a TREAT, as a diversion from conventional cuisine, not deprivation! :)
