This can be a challenging time of year for me and especially now in this stage of the pandemic. It’s impacting work more than ever and there is so much I’d like to get out and do, but shouldn’t and patiently waiting for things to settle down and get more under control at work. It’s a sort of limbo as we’re hopefully pushing through the finale of this like the last few and toughest miles of a marathon. That’s how I’m trying to view this. We have been keeping busy with projects at home, more decluttering and donating, home improvements, fun projects, and deal hunting at Grocery Outlet of course. Ron and Miko were excited about the Lightlife Deli slices.

Miko had a tough week. His primary vet retired and we got to visit his new vet for annual shots. Poor guy had a reaction to one that evening limping, lethargic, and not happy if we got too close to a sore leg. I suspect maybe a nerve was hit and spent time frantically researching in case we needed to make an emergency vet visit. Luckily he was much better by the middle of the night and back to going on walks and being his cuddly self by the next day.
I discovered last weekend that during a huge football game is a great time to go to Trader Joe’s, it was hardly crowded and I was free to leisurely check out new products like this Spicy Pumpkin Curry simmer sauce that brought tempeh, kale, and sweet potatoes to life for an exciting dinner.

And it inspired me to try my own version with curry and tomato sauce – which I need to work on more.

Other eats was a huge salad loaded with peas and chickpeas which seemed less exciting compared to Ron’s Impossible Burger with onion rings!
There has been more salad and tofu stir fries, simple noodle soups, and spicy Thai takeout because I can never get tired of curry.

I am fighting the Sunday blues looking at a 5-day work week and a busy one. But trying to get excited about getting to a healthier place and getting out for more fun adventures. We need to start taking Miko on more hikes and little adventures and maybe getting his backpack carrier out again. I hope you have a great week ahead and maybe the list helps.

I feel this struggle too. Now we’re really in the thick of it, winter has set in with cold weather and dark days, no more holidays to look forward to, and still so much unknown ahead. I’m glad you’re finding ways to keep life bright and colorful, at least on your plate! Sending lots of love. <3
Oh No! Poor Miko! January’s are hard – regardless. Then you throw in COVID and it’s doubly-so. Hang in there! Winter Blues are getting to me – among other things. I’m happy you found some great deals on vegan products tho! Nice!
I know, so hard to see them in pain and feel helpless! Very true on January and you too, winter blues are real especially withy COVID.
What a great way to look at the end of the pandemic (fingers crossed). I’ll be reminding myself that the last few miles always seems impossible, but we’re going to be there soon.
Yes, trying to be optimistic, the last stretch will be the toughest.
