Partied Out for the List

Well, did you survive the holidays? We did along with the rain and wild weather, but I am ready for a break from rich eating and drinking. It has been windy, raining, and feeling much colder than it is here. We’re not complaining, but Miko has not been feeling going on walks the last two days preferring warm blankets and fireplace time inside. And playing with his new little stuffed elephant.

I have been trying to eat healthier leading up to the holiday parties with simple leftovers, tofu and soy curl stir fries, and salads.

But took a simpler route when we had my parents over for Christmas Eve with Gardein Vegan Stuffed Turk’y single serving roasts and vegan sides.

On Christmas morning, we had a quiet time opening gifts, enjoying the rain and fireplace, and watching Christmas movies. My new stainless steep Vitamix container is much quieter than my usual, I have some Legos to put together, and new Air Pods with talk time battery life longer than 20 minutes, lol.

Then onto our decadent, simple vegan breakfast. Did you know Van’s makes frozen plant based pancakes? I had to try them when I saw them at Sprouts and they are surprisingly delicious, way better than I thought frozen pancakes would be. And I shared the Beyond Breakfast Sausage with Miko of course.

Yesterday we had a huge family gathering at my sister’s house where the vegan pesto pasta, garlic green beans, and vegan roast with roasted veggies made for a filling plate, but we had to save room for Daiya Cheezecakes, fruit, and Sprouts Vegan Oatmilk topping.

The cheezecakes are great family gathering options for us because they’re vegan, gluten free, and nut free making everyone happy while somehow still tasting a lot like traditional cheesecake.

Back to the grind tomorrow and having mixed feelings about that after so much food and fun, but it was a relaxing day at home enjoying gifts and getting ready for the week. Back to healthier eating this week, ugh! And looking to the list to get inspired for the New Year!

    OMG Miko’s lil tongue…so cute! I’ll have to look for Van’s Pancakes! I have had the waffles years ago. That Stainless Steel Vitamix Container looks pretty awesome! I posted about Hubby’s Gift to me last week…new blender. I still have my Vitamix but I wanted another one…wanted to see how Ninja’s compared since they are kicking in up a notch these days!
