Happy first day of spring. It wasn’t very spring-like today with thunderstorms and hail! But I’m not complaining about getting rain and the sun should be back tomorrow. I am celebrating spring with this simple dressing. I love just about all berries, great in smoothies, oatmeal, and frozen in wine. They’re also great in a sweet salad dressing that everyone will love.
As much as I love berries, I’m terrible about buying them fresh and tend to stick to large bags of frozen berries from Costco or Grocery Outlet – ready for smoothies and this dressing and no worries about not getting to them in time.
Spring Berry Dressing
- 1/4 cup fresh or frozen blueberries or mixed berries
- 1/4 cup balsamic vinegar
- 1/4 cup shelled hemp seeds
- 2 medjool dates, pitted
- 2 tsp. Dijon mustard
- 1/4 cup water, as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.

A lot of fruit dressing recipes are also packed with sugar and oil, not great ingredients to pair with such a super food! This recipe gets a little sweetness flare from medjool dates and whole fat goodness from hemp seeds. And a fun, tangy flare from Dijon mustard.

The flavor combo is sweet, tangy, with a dash of savory and sings spring.
