This week flew by, right? And Christmas is getting closer! I’m not complaining, shopping is pretty much wrapped up and truthfully with no kids or huge office parties, my shopping is pretty simple. I did get gifts for the pups this weekend, a new toy for Miko and treats for Leela since she’s not into toys. Miko did lots of chilling this weekend between walks, rough life.
Last weekend we continued our holiday celebrations by using up a Tofurky Veggie Roast I got on sale awhile back and needed to be used up from the freezer. Hubby roasted it on a layer of veggies and served with vegan gravy.
It was a delicious treat with great leftovers for the week.
Other eats this week have been pretty simple, sauteed veggies with roasted acorn squash, salad with carrot sticks, hummus, and oranges.
Oil free tofu stir fries, and a kicky potato saute with spicy curry tomato sauce.
We’ve also been to Pho Vegan Asian Cuisine twice this week for delicious dishes.
We also made it to Zest Kitchen because they started serving brunch items all day using Just Egg!
We both got the Just Egg veggie burrito for dinner and the pomegranate “cheese” cake for dessert. Just Egg is very impressive! It’s been a long, long time since I’ve had scrambled eggs, but the flavor and texture of Just Egg worked perfectly in a burrito. I’m pretty sure someone used to scrambled eggs would not know the difference. Can’t wait to go back and try more!
I also tried a new vegan nog for coffee – Good Karma Holiday Nog.
While it’s a little lighter than other vegan nogs, it has a delicious flavor that works great in coffee.
And I’ve been running this weekend with a 30 minute treadmill run Saturday with mixed intervals and a longer easy run outside this morning.
I am determined to work on my pace and hopefully make 2019 a year of racing and meeting running goals after a stagnant year of running for fitness, but not feeling ready for racing or really pushing the distance. That’s the plan and I hope to be writing more about racing plans soon!
I got annoyed with RunKeeper for locking up and crashing during this morning’s run on my Apple Watch and thought I should look into trying Strava, but found it’s not much better after reading reviews and has some odd ways for shoe tracking, etc. Sigh, guess I’ll stick with RunKeeper. What running app do you prefer?
I also braved the mall today with my mom which is an epic dare on it’s own! We needed to do some Christmas shopping and get some inspiration, but I was dreading the crowds and chaos since our mall has blown up into a mega luxury mall and seems to attract everyone from the greater area. Somehow parking ended up not being bad and it was a pleasant trip, I picked up vegan gift packs from Lush and classy scented soy candles for gifts and a candle for us too.
It has a nice Christmas tree scent without being too strong, love it! Okay, to the list.

Haha, agreed! We have a more casual potluck during work hours – much better! We got Leela dental chews too since her teeth are very tricky to maintain at her age.
