Pizza & Better Slaw Dressing

Whew, it’s been a week already! In a good way, but busy. I wouldn’t mind having a relaxing weekend day, Miko was thrilled to be a sweet lap buddy Sunday after a run.

And it was a beautiful run with the ground fog clearing, spring blooms, and wild life.

Sunday was an interesting day of eats starting with a friend’s birthday celebration at California Pizza Kitchen. I confirmed on the menu that the California Veggie Pizza without cheese is vegan and it packed an impressive amount of veggies.

The thin crust had a great, crunchy texture and it was not greasy at all. Not the most exciting vegan pizza I’ve had, but tasty with layers of thin sliced mushrooms and glad to have that option for groups.

Then we had a last minute, casual family gathering at my sister’s house with burgers for the dinner theme. It was the perfect opportunity to bring and try the Quorn Vegan Burgers I scored at Grocery Outlet and we loaded them with Daiya vegan cheese and avocado.

The patties were thin, but meaty and hearty and I liked that they’re only 100 calories each and did not seem greasy or fatty.

Of course I have another dressing recipe! I’m a sucker for slaw because I love cabbage and the slightly sweet creamy texture of the dressing. But horrified to see most slaw dressings are mostly mayo and sugar. Yuck! This one gets sweetness from raisins and creaminess from blended hemp seeds – much better!

Better Slaw Dressing

  • ¼ shelled hemp seeds
  • 3 tbsp. apple cider vinegar
  • ¼ cup raisins
  • 2 tbsp. nutritional yeast
  • 2  tbsp. mustard
  • ½ cup water, as needed
  • salt and pepper to taste

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.

You can add as much or little water as you want for desired thickness, I went a little more runny to coat lots of shredded carrots and cabbage.

It’s sweet with a playful tang and a rich and creamy texture to balance the raw salad ingredients.

I made it a meal salad by adding chickpeas and found the flavors perfect topped with fresh pepper.

I guess I’m channeling warmer weather with this recipe, but why not? This slaw dressing can be enjoyed by all seeking healthy comfort.

    Marveling still at the delicious looking pizza! Scrumptious. I could just gobble the whole thing down myself. I LOVE veggies are pizza. My hubby……..he shudders at them.

      Yes and I almost did, loved the thin sliced mushrooms and corn on it. How can he not love the celebration of healthy colors! I know, it can be more of an adjustment for men. :-)

      Yes and he loves that toy so much, won’t touch his other toys. I need to replace it, but have not found that size yet!
