Well boo on the weekend being over already, where does the time go? Leela spent most of the weekend sleeping in blankets and eating, her two favorite things as a senior dog.
I got some outdoor time on runs and dog walks and the clear skies were gorgeous.
There have been simple and fun eats this week like hubby’s spicy vegan chili with butternut squash, salad, tempeh stir fries, and veggie miso soup with protein edamame spaghetti.
And a spicy chickpea and sweet potato stir fry using coconut milk and Maesri Thai Red Curry Paste.
I’ve been trying to get better at making vegan weekend breakfasts to break our weekday smoothie ruts. I sauteed chopped apples and carrots in a little coconut milk, maple syrup, and cinnamon and stirred in organic quick oats for a fall breakfast that came out great.
Then sauteed chopped kale and vegan bacon bits in a little veggie broth and added quick cook grits with a drizzle of liquid smoke for a savory breakfast.
Friday we had a great lunch at Pho Vegan Asian Cuisine, a pile of veggies and noodles hit the spot after a busy week.
We also had beer and a veggie loaded vegan pizza at a favorite local pizza place and yum, there were plenty of artichoke hearts and black olives!
Today I steeped out for a Sacramento Vegan Society social mixer at Zest Kitchen to be inspired by Coach Ruben and chat with other vegans while having a fantastic veggie-loaded quesadilla.
It was wonderful listening to his inspiration and discuss the lack of nutritional training he received in medical school and what was provided was sponsored by large food corporations hammering in again that doctors aren’t nutritionists and we should seek to avoid/get off medications through diet. There was a power testimonial from a 31-year-old guy who’s already had his first heart attack – whoa! I was surprised at how many guys of all ages were at this meetup willing to share their transformation stories – really great.

Your food always looks so enticing Christine! I confess, last night I ate 2 plain avocados and some steamed broccoli. I felt so lazy! Not to mention boring, haha. And yes, the weekend flew by!
Haha, I’ve had meals like that too! And December seems to be flying by, wow!

I’m convinced that time does legitimately accelerate in December. It’s just wild how quickly the year is winding down. Glad you’re still making the time to create these mouth-watering meals and get out and about though! Sounds like a wonderful meetup group to be a part of. I would definitely join in if it was closer.
