Middle of the Week Eats

Whew, it’s been a tough and draggy week here. I’ve been struggling to stay positive lately with so much ugly news, being crazy busy at work, and dealing with allergies and/or possibly a bug this week. But the weekend is getting closer, so there is that! And I’ve got sweet pups and a sweet hubby to make things better.

I found these Nutpods vegan coffee creamers at Grocery Outlet for an awesome deal this week and grabbed one of every flavor.

The ingredient list and calories aren’t scary, I like that they’re not loaded with sugar. But they need the addition of sweetener for coffee.

The vanilla flavor was excellent with quick oats flavored with raisins and pumpkin spice seasoning with powdered stevia.

I have not been feeling too inspired in the recipe creation department this week and sticking with go to favorites like roasted tahini kabocha squash with curried quinoa.

And a simple savory blend of grains with chopped veggies and chickpeas for dinner one night when my stomach was not feeling 100%.

A spicy quinoa saute with tomatoes and leftover roasted squash chopped for a simple, savory fall dish.

And there was this interesting salad lunch with my mom with tamari spritzed popcorn, roasted spaghetti squash, and tangerines.

Tonight I fell back to a comfort favorite of salad with chickpeas and a savory tahini ginger carrot blender dressing.

Thankfully feeling better and less blah. Sweet hubby stocked up on cold medicines in case things flare up again and the weekend is closer with cooler weather. Hope everyone is having a great week!

    Oh wow, I love Nutpods but they’re still pretty tough to find. I would totally clear the shelf if they showed up at my local Grocery Outlet!

      Yes and the unsweetened variety has been frequently available at Grocery Outlet here – perfect for oatmeal!

    Squash and quinoa sound just right to me right now. I just read your background info and didn’t realize you ate 60 raw diet, that’s amazing! I’m working up to it. I know raw is best, but I’m steaming more which is still better than boiled. And my poor doggies back is back, so instead of doing surgery (he’s too old, he’d never make it through), I’ve opted for acupuncture, just praying it works for the poor pup, I know he’s in pain and on lots of meds so it’s got to fix him and soon, so hard!!!

      Hi from sunny South Africa. Thank you for all the healthy food inspiration. Just want to share how lucky you guys are to have access to all the wonderful non dairy milks and variety – veeeery difficult to follow a vegan diet here!! Also, even with your terrorism threats you are lucky to live in a safe country – here when you open the newspapers every day its rape of women and children, hijackings, murders, shootings – YES every day!!! But the sun is shining, the weather is great, people are friendly and we have a beautiful country…grateful! Love from S.A

        Hi and welcome! I hope the vegan trend continues to gain popularity across the globe with more options. The non-dairy options here have exploded since I went vegan over 7 years ago and I’m optimistic they’ll keep growing everywhere.

      Thanks, breakfast smoothies and lunch salads are typically mostly raw and I do a lot of meal salads for dinner too. But there has been more splurging this month with the vegan chef challenge. :-)

      Aw, sending prayers for you pup, I have the same challenge with Leela, getting cataracts removed from her eyes is not an option due to age. So tough when they get old!

    Can we have one week without a new horrible news story? It’s exhausting! Good for you for eating so many healthy and colorful dishes. They should get you feeling better soon.
