Heat and Fun Eats for the Weekend List

Whew, it is hot today with a high of 105 degrees! I got the dogs out for a walk early this morning before the heat kicked in, but it still wiped poor Leela out who has been crashed in the air conditioning all day.

Bummer is we’re supposed to get triple digits all week with tomorrow being 109, ugh! And this mornings 7 mile run was tough even though it wasn’t hot yet. Oh well, builds endurance – right? Despite the heat, it’s been a good week and great weekend. Eats included more simple tofu stir fries.

And a great lunch out Friday with hubby and family at Pho Vegan Asian Cuisine, I love that they’re so close to work and have such great vegan comport dishes like this curry mock “chicken”.

And hubby got a great mock “beef” dish he added plenty of spice to.

And we also had a lovely, splurge meal in midtown Sacramento at The Porch, a great southern comfort food restaurant that always has solid, new vegan options on the menu. Like these Cajun fried beets.

Spicy cauliflower wings over mashed potatoes and slaw.

This great salad with quinoa and grilled summer veggies.

And the star of the meal – dessert! They always have one solid vegan option on the dessert menu that changes regularly which I love. This weekend it was a decadent lemon poppy seed cake with vegan butter cream frosting and peach sorbet.

It was perfect, I would have been happy with that and wine for dinner!

I also found a new product to try at Grocery Outlet – Love Beets Smokey BBQ Shredded Beets.

Which I used in a huge salad with chickpeas, tomatoes, peppers, pickles, celery, and sprouts dressed with a drizzle of tamari, apple cider vinegar, and nutritional yeast.

The beets are perfect for salads, they have a sweet and savory flavor and perfect texture that’s not earthy. And the shredded “noodles” are fun to eat like pasta.

And last night I got lazy using up half of a steamed acorn squash. I chopped it up and sauteed with celery, onions, and more peppers in a marinara sauce for a simple and fast dinner.

It was good, hearty and tangy – a lighter, veggie-loaded Italian dish.

Boo on the weekend almost being over, but there is a long holiday weekend coming up to look forward to. And the list!

    Wow, that is hot! We’re having a cooler time over here. It’s only supposed to get up to the mid 70s which is soooo cool for us this time of year.

    That mock meat dish and the cauliflower wings look especially amazing!

    The lemon poppy seed looks so good! I love lemon poppy seed muffins so I can imagine a cake would be delicious as well. The cauliflower wings look good too.

    OMG – all of these eats look soooo good! I’m transitioning from vegetarian to vegan, so these give me some great ideas :) also Leela is the cutest!!

    What a stunning cake! I’m super picky about my baked goods and honestly rarely order them when eating out, but this looks genuinely worthwhile.

    PS, love those smoky beets. I wish my local GO had them!

      The cake was wonderful, thinking of going back again! Me too on baked goods, so many are too dry or overly sweet.

    Hi! Long time! So sorry! I know I have a LOT of catching up to do on your blog! YIKES!!!

    I remember trying those BBQ Beets at WNY VegFest last year. This year was the first time since WNY VegFest started that I didn’t attend. I’m a little bummed about it but life got in the way! LOL

    You have won my heart with that poppy seed cake with lemon! Oh my. Poppy seed is my ultimate weakness in life….oh yum. 5-star dessert. Drooling over here! bug 105 degrees, I’ve never experienced anything higher that 90 degrees so I can’t even imagine.

      Oh yes, agreed – poppy seed is heavenly paired with lemon! Ugh on our heat, this week is all triple digits and the highs are starting earlier and lasting longer.
