Sigh, it’s hot again this weekend. High of 107 degrees yesterday and the pups are feeling it. After our long morning walk before the heat kicked in, they were happy to crash all day in the air conditioning.
I pretty much did too after a strange week, I’m still getting back on schedule after camping and the 4th. It was nice getting the 4th of July off work, I got to the gym for an early-ish workout and was surprised at how crowded it was. Guess a lot of people wanted to get in a good workout before the holiday festivities.
We had a great casual family party at my sister’s house with plenty of food – vegan hot dogs, salad, fruit salad, and mashed potatoes, and drinks.
I also met my dad for lunch at Yard House this week where I’m becoming a fan of their vegan Gardein Kale Burger with Daiya cheese.
It’s not a traditional Gardein vegan burger, but more of their custom creation using Gardein meat substitute with seasoned kale and quinoa blended into the patty for great texture and flavor.
The heat has sucked some energy and zip from running this week which is to be expected, but I have been getting to the gym and getting through it.
Eats have been pretty typical trying to eat better after camping and partying – oil free tempeh stir fries, cool salads, and stepping out for spicy vegan Thai food.
Lots of fruit, especially chilled watermelon. Of course deal hunting at Grocery Outlet and I scored a lot!
And last night I had a comfort meal I’m not entirely proud of, but oh well. Costco has a great deal on a 3-pack of Amy’s Kitchen Vegan Roasted Vegetable Pizza.
And it’s delicious for a simple veggie pizza without fake cheese or meat, the shiitake mushrooms and roasted red peppers make is a satisfying treat for a light pizza. And saved room for dessert – a splurge I caved on from Grocery Outlet – So Delicious Coconut Milk No Sugar Added Vanilla Ice Cream. One thing that keeps me from buying a lot of vegan ice creams is they always seem to freeze into a hard rock that is nearly impossible to scoop out. Not this stuff, it was actually simple to scoop right out of the freezer! And for only 110 calories per serving, was satisfyingly sweet and creamy.
Today I had a decent 6-mile run. I planned for a 4-ish mile, but stayed out longer clearing my head and enjoying outside time before the heat kicked it. It was a slow, easy run because it was already hot, but still nice to get a little active time and blow off steam.
