Yes on this week almost being over. It seems strange to me that I feel frazzled at times when we don’t have kids. But sometimes just working full time, running a house, taking care of fur kids, and maintaining fitness is a lot too. How sad is that? Work has been very consuming lately without opportunities to take breaks to do anything else with a lot of projects going on. But that’s our modern busy lives I guess and the race to see who can juggle more. That’s a race I’m not training for well this week! Sweet Miko is always ready for down time with us and lap time when I’m in the home office.
And my eats have been lacking excitement this week – healthy, simple, and fast. But typical for me like this oil free curry tofu stir fry with fresh veggies.
A bright kale salad with hummus dressing.
Another simple veggie tofu stir fry with tamari and sriracha sauce.
I did have fun for this easy creation using Prego Farmers’ Market Tomato & Basil Sauce for a simple saute.
I steamed chopped potatoes in just enough water with broccoli and chickpeas, them added bell pepper and the sauce to simmer for 15 minutes or so.
I blended in some nutritional yeast for a hearty and cheesy texture for a fast one pot meal with vibrant colors.
The sauce was perfect for potatoes and broccoli adding a tangy basil kick with a little tomato sweetness. Probably a healthy kid-friendly dish too and hit the spot after a crazy day.
