It’s been a long and lazy weekend here so far and Miko has been perfecting his relaxing skills crashing on the couch with us.

We’ve been getting some relax time too between projects and checking off the to do list. Leela’s vet appointment went okay Friday, no major problems and we have another teeth cleaning scheduled. She has a heart murmur now which is common for dogs her age. But the vet also could not recommend cataract surgery for her eyes because of that condition and her age, it could be a pretty extreme surgery for her and risky. I’m a little bummed about that, but hopefully she’ll adjust okay and I got a better harness to help her more on walks.
This week has been an odd week of experimenting with simple eats. I used chili lime seasoning in this simple tofu veggie stir fry that worked well for a bright, summery flavor.
And sauteed carrots, a shredded cabbage blend, and pinto beans in Trader Joe’s tangy teriyaki citrus sauce. Looks odd, but was tasty.
And used Trader Joe’s Everything But the Bagel seasoning in this tempeh and potato saute.
Then used it again for a tasty tahini dressing for this loaded salad.
Breakfasts are still smoothies here even on the weekends too.
Maybe I should mix it up more with “fun” weekend breakfasts, but smoothies just work well before heading to the gym or out for a run. Instead I rotate between protein powders, and a variety of fruits and veggies.
Friday we tried a new-ish local Thai place with vegan options instead of the usual location where I got panang curry with tofu.
It was spicier than I’m used to which I liked and I also liked that the tofu was not fried and still had a nice texture.
And last night we went to a backyard BBQ where a friend’s band played. I got to be the volunteer videographer for the event with our tripod and DSLR which was fun. I’m more a photography person, so I’m just happy the videos came out okay! The food spread and vegan options were great – tons of fresh fruit, veggies, and salad. They even prepared Tofurky hot dogs which was pretty awesome. Check out this happy and colorful summer plate.
And I am pretty wiped after a run and lots of yard work today and being social for hours last night, so it’s been nice to stay home today, take the dogs for leisurely walks, and check off some yard work. And now play dueling chefs in the kitchen with hubby and sip wine while we decide what to movie to watch. So to the list and I hope everyone is having a great holiday weekend!

Looks like great, healthy eating this weekend for you Christine! I need to do better. No more brownies. No more pie! Ughhhhh. Anyhow, I think my dog has cataract too in his eyes, but he’s almost 19 years old!!! Old for even a dachshund, so surgery is not an option for him. Hard to believe I’ve had him for hat long. And another teeth cleaning for your dog, good for you, I’m still doing it myself with the doggie toothbrush =) bleh.

I hear ya and I feel the same way after splurge holiday eating yesterday! Great for you brushing your dog’s teeth – how do you do that? Mine won’t let me get near their teeth!

Miko’s pics were so cute – especially the one with his little butt hanging out. I hope Leela can adjust. It must have been upsetting to hear about the surgery. It’s so nice you got her a harness to help.

Haha, thanks. :-) Me too for Leela, the harness seems to help, but getting it on for walks is more complicated since it’s a step in style she’s still mastering.
