Happy Easter! We’re getting ready to head to a family party – always looking forward to great company, good food and wine. Miko and Leela are not happy with me because the weather is wet and rainy again today and I need to figure out how to get them out for a walk soon.
I did get out for an 11 mile run this morning before the weather got too bad. It started getting windy and over cast, but the spring views were still gorgeous.
The run was just okay as many of my long, outdoor runs have been lately. I’ve been able to have great runs on treadmills indoors, but allergy problems are a drag for outdoor runs. That’s always been a slight problem in the spring for me, but it’s been really bad this year with all the rain and strange weather I guess.
Since I’ve been having a tough few weeks with stress, hubby sweetly surprised me at work for lunch this week taking me to Pho Vegan Asian Cuisine.
Where this lemon grass mock “chicken” dish was wonderful!
And a goody bag of treats.
Such a sweet angel! I surprised him with a fun find from Grocery Outlet – Gardein Chipotle Black Bean Sliders.
He dressed them up with greens and vegan mayo and gave them a thumbs up served with fries.
I’ve been on a marinara kick lately creating simple sautes with it like this one with chopped tempeh, zucchini, and carrots.
Simple and ready in minutes which was perfect after a long day.
We also stepped out for a hearty comfort meal Friday night at our favorite local Thai dishes. I think we may go there too much because the waitress stopped by our table and knew our beverage order before we even said it – Blue Moon beer and waters, ha! But this tofu coconut curry dish was perfect with brown rice.
And they do a great vegan drunken noodle dish for hubby with lots of veggies.
After this week, I am ready to relax and have fun with family. And focusing more on slowing down, deep breathing, and taking it easier as I head into another busy week. But first, getting inspired by this week’s list.

Totally agree on the allergies this season, what is up with them. Itchy, miserable eyes. Been on that same marinara kick, plus you never can go wrong with zucchini. But with the rain, getting the dogs outside is insane. The cat just can’t go out…..don’t trust him!

Yes, allergies are very bad for me this year! Agreed on zucchini, it’s so versatile, healthy, and abundant during spring and summer. Haha, I have the same issue with my dogs and this weather.
