After preparing and rushing for a half marathon and losing an hour last weekend, it’s been nice to chill a bit this weekend and Miko is always ready to chill on his favorite soft couch blanket with me while binge watching X-Files.
Leela made herself a cozy bed in the pile of warm blankets that came out of the dryer.
We have been doing other things this weekend too like drinking smoothies and going for walks enjoying the peaceful overcast weather.
And I’m getting ready for a long run in the perfectly gray and still weather this morning.
I also scored a lot of deals at Grocery Outlet after the gym Saturday like cold brew coffee which I’ve never tried before, vegan organic cereal made from beans, and this Food Should Taste Good Caramelized Onion & Herb White Bean Hummus.
It has a different texture from traditional hummus, a little more runny. But delicious onion flavor that I’ll be using for many salad dressings this week because I bought multiple containers for the price.
I also made St. Patty’s Day themed dinner by whisking tahini, apple cider vinegar, tamari, and Dijon mustard together to coat chopped potatoes with fresh parsley and roast at 400 degrees for 30 minutes,
I used up some veggie nuggets to go with the finger food dinner and made a simple parsley and garlic avocado dipping sauce in the Vitamix. Miko loved sharing the potatoes.
We also stepped out for custom vegan sushi one evening at a local place that usually does a good job. But it was a little hit or miss this time, I got nervous when I had to explain to the waitress multiple times what vegan meant and had to switch to vegetarian with no egg or dairy. And the custom rolls we got this time were a little messy.
But still delicious and they actually brought me a special restaurant container of non-GMO tamari to go with them instead of the cheap soy sauce on the table which was a pleasant surprise since I didn’t request it. I need to find out if more sushi places have these by request!
I made a huge batch of quinoa and pinto beans with veggies mixed in seasoned with miso paste, garlic, and srirachi.
The leftovers were great for another simple lunch and dinner this week.
Hubby made delicious roasted balsamic green bean fries one evening.
I have been on a roll with quinoa this week, I batch cooked a huge amount to use during the week for simple meals and to mix into dog dinners. I sauteed more with veggies, Lightlife Smart Grounds Mexican Crumbles, and salsa for a fun Mexican themed one pot meal.
Of course salads, there are always salads – this one with carrot ginger dressing and black beans.
And a simple saute with veggies and Gardein Beefless tips for a colorful dinner.
It has not been a bad week and I even got some more decluttering done as I overhaul our closet filtering out winter stuff I just did not wear and started bringing down warmer weather clothing. That always feels good, there is always a box going in the garage that I drop off as soon as it gets full and cheerfully remind myself it’s less stuff to clean and maintain! Soon I will need to do a little shopping for new warmer weather running shorts and compression gear once I get rid of the older stuff. Until then – the list!
