Over this Week

This week is almost over, woohoo! It has been an off and strange week for me and I am ready to end it. The 4-mile Valentine Run I did on Saturday with my sister did something awesome – they let us download the race photos for free! Normally I don’t care about them, especially for shorter races – but this photo wasn’t horrible.

Okay, still some awkward running face going on, I was focused on pace.

For Valentine’s Day, hubby sent these sweet flowers to work for me.

And we stepped out to Pho Vegan Asian Cuisine for lunch because we’re still obsessed with that place. I got the vegan mock lemon “chicken” this time with broccoli, pineapple, and lemon slices and it was delicious.

For dinner we stepped out to a nice local Indian restaurant for wine and classic vegan dishes to share – chana masala and aaloo mattar.

Hubby also made a huge batch of pasta in our Instant Pot Sunday that we’re still eating leftovers from!

And I batch cooked a huge pot of lentils for the week to mix into salads, sautes, and dog meals. They were delicious sauteed with veggies in a marinara sauce.

And sauteed with chopped potatoes and more veggies in veggie broth seasoned with liquid smoke, fresh parsley, garlic, nutritional yeast, and salt and pepper for this hearty meal.

It’s been a tougher and more draining week than usual with car trouble, work stress, possible dam disaster stress, and Valentine’s Day which is a sweet and romantic holiday, but can also be stressful. Especially this year being on a Tuesday, a little hard to go out an celebrate when there’s work early the next morning. Hubby and I decided we’re keeping it lower key next year cooking at home. And this week has been a good opportunity for me to slow down a bit, remind myself to be grateful, and keep priorities in check.

    I’ve been worried about whether you might be in the path of the dam. I hope all is well! You made me laugh with your, “not too horrible” comment about your picture. I’m the worst when it comes to taking good action shots, so I totally relate. :) It looks like you had a great V Day, even though it was on a Tuesday.

      Thanks and we’re not on the damn, but close to communities that are. Haha, I usually cringe at most of my race photos. We did, it was a nice little break in the crazy week. Hope you did too!
