More Pre-Marathon Eats

Okay, maybe now I’m starting to get a little nervous and excited about Sunday’s marathon. I also learned that Scott Jurek will be running it too, how cool is that? I hope I get an opportunity to meet him! Today was my final training run at the gym and it was only 2 miles. It felt so strange doing such a quick and short run after logging so many miles. But it was also nice getting out of the gym a little earlier for a change.

I am still focusing on high carb, low fat, whole food meals for this week. I made a huge batch of brown rice sauteed with tempeh and green beans seasoned with tamari last night.

And had the leftovers for lunch today.

I have to share green beans with Miko, he goes nuts for them.

I’ve also been snacking on simple air popped popcorn spritzed with a blend of apple cider vinegar and tamari sauce.

Tonight I simmered chopped potatoes, kidney beans, and kale in Trader Joe’s Organic Fat Free Spaghetti Sauce for a simple dinner.

Whew, it was filling! But hit the spot after the gym.

Eek, the race is almost here! Trying not to stress about it and just get excited about the experience. This is a huge marathon with 9,000 runners plus a lot of relay teams, so I’m looking forward to participating with so many other runners and see all the spectator action along the route!

    That quick popcorn fix sounds delicious! I usually just go with a spritz of avocado oil plus a generous sprinKlein of nooch, but I’ll definitely try your approach next time.
