Leela is getting pickier about her food as she ages, maybe sensitive teeth. Lately she’s been lightly snacking on her dinner bowl throughout the night in stages.
I need to get her the smaller V-Dog kibble soon, so glad that’s an option for small dogs now! Smaller kibble should absorb water and veggie broth quicker for dogs that prefer softer food like her.
I’m recovering nicely from my 20-mile run Sunday, I wore CW-X Insulator Pro Tights and I think they really helped minimize soreness. I didn’t wear them for the 18-mile training run and noticed a big difference in recovery time.
But I am keeping things easy this week with so many training miles, lots of one-pot meals and remixing leftovers. I topped a simple salad with chilled quinoa leftovers for lunch yesterday.
And made a simple high protein miso soup using Explore Asian Soybean Spaghetti.
So easy, just simmer the noodles in water or veggie broth, add a blob of miso paste, veggies of choice, and sriracha to taste. The leftovers made a simple lunch today too.
Last night hubby made this Slow Cooker Tomato, Kale, and Quinoa Soup in our Instant Pot.
And it came out great with a colorful display of beans, quinoa, and fresh veggies. Not too salty and easy to blend in more seasoning and veggies if desired.
And we have tons of leftovers from it! I had it again for dinner tonight topped with nutritional yeast and green onions to mix it up a bit, delicious.

Haha, you’re too funny! Me too! We make a lot of 4-8 serving recipes for just two people and it’s tempting not to leave any after a long run!

All your meals look delicious as usual! I spent Tuesday cooking and made a big batch of pasta and three different sauces to use throughout the week. It was my first time making and eating curry and I really enjoy it! The kick at the end is nice and turmeric is great for inflammation.

I’m a huge proponent of recovery socks, which are probably the same as tights. I just read an article about a vegan ultra runner who said that his recovery was much better after he went vegan. Actually, you may have shared that interview.

Me too on socks and the tights are a little more extreme, but insulated too since it could be really cold for the CIM!
