It has been a tough week with work, heat, training, and other challenges. It was still close to 100 degrees when I left the gym at 6 pm today, I am ready for fall! And it’s coming, check out the leaves on our tree!
Training has been tough this week, the heat and work stress is getting to me I think along with other challenges. I still got all the running workouts in – but tonight’s was slower and not as much of a hill training run as I had planned because my legs felt done. Thank goodness tomorrow is rest day and the weekend is almost here.
Sweet Leela has been a little more clingy and social this week sitting at the dinner table with us and getting vocal about demanding walk time.
I think she’s getting excited about fall too.
Sunday night I decided to eat like a kid – seriously, look at this plate.
I had a box of So Delicious Vegan Mack and Cheese sitting in the pantry and a package of Lightlife Smart Dogs to use up, so vegan comfort food it was!
I made up for it the next day with a huge salad and rice for lunch.
And another huge salad for dinner with chickpeas.
I am still on a bean kick lately adding them to everything. I simmered a can of organic kidney beans with veggies in marinara sauce and topped with nutritional yeast for a simple and filling dinner.
Then simmered a can of organic black beans in coconut milk and spicy curry paste with more veggies for another simple and quick dinner.
Not bad eats and I’m so thankful tomorrow is Friday and we have fun plans to look forward to this weekend. I hope everyone is having a great week!

I can’t believe you are still running in such hot temperatures. I am melting over here and it is just has been in the 90s. But it has been humid so they keep saying the heat index is in the 100s.
