It’s the simple pleasures in life for Miko, his day got a lot more comfy when he discovered the fresh and clean folded up comforter on the couch.
I’m venturing out of my comfort zone pushing more miles and running workouts and a lot of the weekday workouts are on a treadmill at the gym.
It’s just too hot to try and run outside after work lately and I’m not that much of a morning person to cram in a run, shower, and hair drying before leaving the house at 7am. But the treadmill is working for me making it easier to control pace and do calculated tempo, hill, and easy running workouts.
Keeping it simple is important for me currently because we’re still deep in migration project mode at work and I’m fried by the time I get home. So it’s about mostly whole food one pot meals I can throw together in 15 minutes or less, before my attention span and patience expire for the day. Here are some of the dishes that have worked while still being delicious and satisfying this week.
I tried another Explore Asian protein spaghetti product, Organic Adzuki Bean Spaghetti.
For fun spaghetti, it has a super simple ingredient, non-GMO, and loaded with protein and fiber.
I kept the simple theme simmering the spaghetti in miso soup with onions, kale, and carrots. I adore that the spaghetti is so hearty by itself and no additional protein is needed making simple one pot meals.
Another product we recently scored at our local Target is Hampton Creek’s Just Caesar dressing. While I’m not a fan of the traditional caesar salad, this thick and creamy dressing is a fun addition to any veggie loaded salad with a rich and tangy flavor.
I mixed kale, chopped tomatoes, and leftover curry coconut lentil rice mixture with a little of this dressing for a fabulous meal salad.
The texture of it is thick enough to make a great dip too.
Tonight I was feeling wiped after another head-spinning day and simply sauteed chickpeas and a pre-cooked pouch of brown rice with a frozen blend of kale, onions, and mushrooms for another simple one pot meal.
It was delicious seasoned with just a seasoned salt blend.

Sometimes simple, healthy meals are just the way too go! Especially in summer because we just don’t get much nice weather here, only 2 months and then it gets colder!

Nice time on your run! I hear you about it being too hot to run in the early evening. I’ve been getting out early in the morning only because I hate running on the treadmill. It hurts my knees and feet.

Thanks and whew, it was a tempo run! That’s too bad on treadmills, I haven’t noticed that yet.

I’m dying to try all of the new Hampton Creek products, but I can’t find them! It’s frustrating that they’re mostly Target exclusives (as far as I know) and the closest Targets to me are all mini/”city” versions with really limited options. I hope they’ll branch out farther afield soon.
