It has been hot this weekend, a high of 106 degrees both Saturday and today. The pets are perfectly content to lounge around inside and enjoy the air conditioning.
I don’t blame them! It’s been a quiet weekend for me with hubby out of town at a convention for work, I got the house to myself for a few days to watch what I want on Netflix and celebrate my birthday with family. I had a nice lunch with my mom on Friday of a rice blend and salad – cool salad, smoothies, and chilled watermelon are perfect in this heat.
Friday night we stepped out for beautiful vegan sushi with colorful broccoli, greens, carrots, and avocado.
Saturday I made a huge vanilla ginger protein smoothie for breakfast with Garden of Life’s Vanilla Protein & Greens, frozen bananas, orange, and carrots for a pre-gym breakfast.
I’m slowly working on increasing my running workouts and mileage, but I have not been pushing my pace in this heat yet. I did a 35 minute easy treadmill run and logged 3.7 miles mixing in intervals.
Not fast, but I didn’t want to push pace too hard since it was an easy run and I felt the heat even in the air conditioning – it seems to take more out of me just to function and run errands.
Lunch was a lazy and easy salad using organic greens, kidney beans, and a hummus dressing. Simple, filling, and cool.
Dinner was another easy one pot meal with chopped potatoes, cauliflower, Field Roast Vegan Sausage, and kale simmered with marina sauce in an oil-free saute.
Hearty and satisfying, but not too heavy which was perfect.
This morning I planned to run 6-7 miles outside early at 8 AM before the heat kicked in and had this Chocolate Coated Crunch Square Bar for a light breakfast.
Delicious, like a crunchy candy bar!
My run ended up only being 5.59 miles at a slower pace before the heat started getting to me with a headache.
Which was fine, I walked the rest while catching up on the Planet Money podcast not wanting to push too hard.
And had a little time to catch up on laundry and relax after before meeting my mom and sister for a birthday lunch at Baagan where I started with a Revive Kombucha.
The O.G. flavor was like a kicky vanilla cola and very good, not too sweet.
Then on to the jalapeno loaded Chipotle Tacos which were delicious with mashed chickpea taco “meat” and cilantro lime slaw.
And had the lemon meringue vegan cheesecake which was an insanely good summer treat!
It’s been a fun, hot, and relaxing weekend – nice to decompress a little after such a crazy work week. Can’t complain and feel lucky to have great family and friends to spend it with and so much great vegan food! Sometimes birthdays can be a little blah, but this one was nice and hopefully next week won’t be as crazy at work.

I just gotta say, that lemon cheesecake looks absolutely fabulous! Lemon just makes my world go round. The taco’s are a really close second, loving that avocado on top. I eat one almost every day for those good fats! And 106 degrees……too hot for me. Although it’s been in the 90’s here and for Buffalo, that’s nearly impossible! I’m so thankful for my in-laws cottage on the Lake so we can swim and get out of the heat.

It was amazing and agreed, I’m obsessed with lemon especially in summer. Nice on having access to the cottage, there are a lot of cooler escapes here too, I just need more time off work! :-P

106° is WAY TOO HOT! Good for you for even trying to run after 6:00 am in that heat.
I love having a night or a weekend to myself once in a while; just to catch up on shows and movies my husband won’t watch. :)

It is! It’s supposed to be 108 today and tomorrow, ugh! I might have to get up at 6 am for next Sunday’s run!

Oh man, I love Revive Kombucha! I discovered the brand at Eat Drink Vegan and absolutely adore the cold brew coffee flavor. It’s been on sale at Berkeley Bowl lately and it’s hard to resist the lure. If not for the caffeine, I would drink it all day and night!
