It’s been a bit of a quiet, maybe a little dull weekend here, not as fun as last weekend since I’m on call for work during a big migration project. Smokey is happy to have me home and has been taking every opportunity she can to get more attention.
It was a little nice to relax after a crazy week at work, I’ve been feeling a little tired and blah. But it will be nice to not be on call next week!
I have been trying to reduce the fat and focus on more beans and whole foods in my diet lately as I plan to get serious about race training, lots of large salads like this kicky one dressed with spicy salsa and nutritional yeast.
I simmered chopped potatoes, chopped tempeh, and broccoli in marinara sauce for a simple dinner after a long day at work and gym.
It was great topped with a hemp seed nutritional yeast “parm” blend.
Another huge lunch salad with steamed acorn squash.
This dish came out interesting! I sauteed precooked brown rice with Lightlife Smart Ground Mexican Crumbles, kale, and carrots for a simple, one pot meal.
And made a messy salad with kidney beans, balsamic vinegar, and Luke’s Organic Vegan Crackers.
This dish looks interesting, but it was actually delicious. I simmered brown rice with a blend of lentils and grains in coconut milk and spicy curry paste with frozen veggies.
Friday night I took hubby out to Paul Martin’s American Grill because they added three new vegan options to the menu. We started with the loaded summer veggie rolls with a sweet and spicy chili sauce.
And I got the warm quinoa bowl loaded with more veggies and topped with a grilled avocado half. Both were excellent, the veggie rolls were very fresh and loaded with a vibrant variety. So was the quinoa with a party of savory, tangy vinegary flavors and a blend of good mushrooms.
It’s been a great week of eats, and decent week of running as I work up to five running workouts a week and start building mileage. Today’s 6.2 mile run was a little slower with strong winds and I think work stress is getting to me a bit. Hopefully next week will be better since I’m not on call. The list:

Again, you just making eating vegan look simple, delicious and fun. We are enjoying the fruits of our harvest with lots of garlic, zucchini, tomatoes and fresh herbs in all our meals. Oh, and corn. So sweet. Love all the inspiration you provide!

Love all of the eats! Whole foods really do help kick up the training a notch! I need to eat more salads these days- Ive been doing boat loads of spinach in my morning smoothies so that seems to help with energy levels as well. I loved checking out the other thinks too- especially the vegan makeup one- Ive been working on switching all my cosmetics to cruelty free brands!

Thanks! Very true on whole foods, more beans and fresh fruits and veggies seem to help me versus higher fat goods like lots and seeds and nuts. Me too on vegan cosmetics and love having a list of vendors to choose from.
