Good morning and happy Sunday! I might be addicted to Pho Vegan Asian Cuisine lately because I went twice Friday! I met my mom, sister, and nieces there for lunch and got this wonderfully spicy Kung Pao Tofu with cashews.
And hubby was a little disappointed that I went without him because to adores their Broccoli “Beef” dish, so I took him back for dinner and got the eggplant tofu stir fry this time.
And I’m not tired of the place yet!
We also headed to Grocery Outlet after the gym Saturday to load up on more deals for another family gathering last night, check out the price on hemp oil!
Tempting if I needed some, but I did load up on vegan Pop Chips for snacks at the party and I really liked the sea salt and vinegar flavor even though some found the vinegar too strong.
I also scored a huge container of Sabra Lemon Twist Hummus which was a new flavor adventure.
Turns out it was a hit with carrots and very good, the lemon flavor with just enough to be bright and refreshing without being too much.
It would not be a summer party without watermelon!
And dinner was a pretty awesome salad topped with white beans and grilled corn.
I’ve kind of had the blahs this week and beating myself up about it because I have no reason to, I’ve got a job and things are good, plenty to be thankful for. Right?! But I think summer time blues are a real thing and especially for working adults. I got a laugh out of College Humors 6 Reasons Why Summer is the Worst article and then a little sad when I realized 1 and 4 hit home. Everything – paper ads, TV ads, local events, Facebook feed, etc. all revolve around having lots of fun for the summer, getting out an enjoying nature, beaches, vacations, outdoor fun, and warm weather all the time. Not possible if you have a job and limited vacation time! It was my nieces’ first official day of summer when I had lunch with them Friday and I got a little jealous listening to all of their summer plans and that they got to go bowling after lunch while I went … back to work. Yeah, I was a kid once too and they’ll be adults soon enough with jobs unless robots have taken over all the jobs at that point and we’re all living on government salaries … then hey, summer is back! Not whining, I know I have a great life and tons to be grateful for. Just observing that summer seems to be a natural low time for working adults and maybe I need to take a break from seeing all the fun Facebook friends are having.

Oh, I saw that lemon hummus at the store the other day and now I’m kicking myself for not snagging it. It sounds like a subtle variation on flavors I already know and love. Next time, for sure!

I get the summer blues for sure. I think they started in college when my parents moved across the country, and I had to spend the summer in southern utah away from all my friends. Then after that I had to get a summer job every summer to avoid going out there, which meant summers alone since most friends went home for the summer, but all my high school friends were too far away to just visit. Though I have fond memories, like watching fireworks with my boyfriend from our apartment windows, and simply enjoying the emptier streets (school was out so the downtown area were a little less crowded) Then after that it has been dealing with the heat and my hubbies (and his father’s) temper. We much prefer to take our vacation far north or during the fall, winter, spring. XD

That was me in college too living in Florida, but not having the time or money for road trips, etc. Us too on vacations, September works out great since the weather is still good and kids are back in school.
