Good news, Friday is almost here! And here’s what the tomato plants look like in the AeroGarden after 33 days.

From seed to a tomato jungle in a month! The plants are starting to flower and we get to cross pollinate them with a little brush when the flowers are big enough soon.

My Sunday long runs have been between 6-7 miles lately since I don’t need to jump into race training mode for a few months and wouldn’t want to since long runs here can be brutal in the summer triple digit heat! It’s been a fun excuse to play with my pace, tempo runs, and stride. And possibly difference style shoes soon. Sunday’s run weather was perfect, gentle breeze, overcast, and cool.

Pebble released a huge software and firmware update this week for the Pebble Time that added a lot to the fitness and sleep tracking features. It’s been praising me every time I complete a run or intense cross training session since with the ability differentiate between regular walking and daily activities and more intense activities now.

And the new fitness tracking and graphing features in the app are nice. Have not tried the sleep tracking yet since I don’t like to sleep wearing a watch, but maybe I should since stress has been interfering with my sleep a little lately.

Not the case for Leela, she’s always happy to crash in her office bed when I’m working in there.

And Miko loves his bed tucked under my desk especially with his Star Wars toy from hubby.

Sunday we had a long overdue family gathering to celebrate Mother’s Day and birthdays, it was a casual dinner building taco plates. Always fun and easy to do vegan! I layered a salad with taco seasoned sauteed lentils, avocado, spicy salsa, black olives, and Daiya Cheddar Shreds.

While the kids may have been disappointed to not have a sugary dessert, I was thrilled to have my favorite dessert – watermelon!

There was a little rich eating, so Monday was a simple kale and edamame salad for lunch.

Other simple eats this week included a spicy curry coconut tofu stir fry with broccoli, peppers, tomatoes, and onion.

And simple broccoli-beefless stir fry with carrots and Gardein’s Beefless Strips.

The strips have a hearty, but moist texture that works well and would also be good pan fried for crispier edges. And, whew, I am feeling a bit fried after this week for some reason. I think allergies are getting to me more than usual the last two weeks and/or maybe something is being passed around at work. I am looking forward to a little fun and downtime this weekend!

    Watermelon is my favorite go-to dessert too! I confess, some days, I’ll eat a whole one by myself!! Too bad I’m too lazy to cut one of other days. But we’ve been getting some good ones lately! So yummy. Good for you on your amazing runs! I’m been walking….does that count? I guess it’s still exercise and gets me out of the house! Have a happy weekend!!

    I really like the beef strips, probably because it has a rich flavor I have a hard time recreating on my own. If I am eating store bought fake meat, I want it to be something different, you know?

      Agreed, I liked the texture and flavor too – more like a Salisbury steak in this dish and not too chewy. Fake meats that are too realistic tend to freak me out a bit.

    Wow, that’s a great pace! I’m not sure I could sustain that for thirty minutes. I better get to it if I want to finish the marathon-haha!

      Thanks, it was intense for sure! Since I don’t need to start pushing my mileage for a few months, I’m focusing more on pace with shorter tempo runs.
