Happy Mother’s Day to the mothers out there! Hope it’s a wonderful day. We’re planning a casual family gathering to celebrate today which I’m looking forward to. It’s been a great weekend so far, hubby and I saw Captain America Civil War yesterday and it was good … well, duh. And by some awesome lucky miracle, the theater was not crowded! We’re also getting more rain this weekend which is great, but I had to sneak in a long walk for the dogs between the rain where we got to say hi to new friends.
Yes, we live near what seems to be a small scale cattle ranch and this was really cute and hard to see because there are a lot of cute babies with their mothers. They’re so friendly always coming over to the fence to check us out.
Eats this week have been simple since I’m trying to focus my diet on more whole fruits, veggies, and grains as I start planning marathon training. This is another simple Tofurky marina veggie saute.

Friday night we stepped out to Pho Vegan Asian Cuisine for dinner where I got the Korean Tofu noodle dish – yum.
And hubby for the vegan “beef” and broccoli dish which is loves with plenty of spicy pepper sauce.
I was thrilled to see that it was hugely crowded, there was a long line waiting to order and all the tables were occupied when we left. I love seeing a positive vegan place gain popularity!
I finally used the bag of Trader Joe’s Organic Black Bean Rotini pasta in our pantry last night in another simple marinara veggie dish.
The pasta was simple to cook like traditional pasta boiling for 8-10 minutes and made a beautifully colorful dinner.
It tastes like black beans with a slightly firmer texture compared to traditional pasta which I liked. It’s a versatile, high protein, gluten-free pasta alternative that I would buy again.

I love the idea of black bean pasta! I’m going to get this asap. I’m actually so proud of myself for eating pretty healthy lately, I’m certainly not as nearly creative as you, not even close but I do manage to cram those veggies in. Can’t wait to start harvesting to eat more!!

I love the color of the black bean pasta. Eating is much more fun when fun shapes and wild colors are involved. I want to eat new things. After my marathon at the end of the month I plan to start experimenting with more recipes (ones I decided were too decadent for my marathon nutrition if you catch my drift ;-)

The color is awesome, different and fun. I tried serving black bean spaghetti to my young niece awhile back and she had a fit because it was a different color. :-P Oh yeah, marathon prep is very consuming now I’m sure! But you’ll rock it!
