Happy Sunday! Hope everyone is having a great weekend. I have a busy day planned with a long run then a volunteer shift at an Earth Day event which should be fun! I am looking forward to fun social time with friends in the local vegan and vegetarian societies because I’ve been in a bit of a funk this week. Work was just crazy busy, if you’re in IT you know that things can be stressful when unplanned network changes and issues all hit at once. That was this week.
Friday morning we had a windy rain storm and Miko wanted nothing to do with it perfectly happy to hide under his blanket.
Smokey enjoyed crashing on her favorite blanket too.
This week involved a lot of simple eats like roasted spaghetti squash and salad.
And I’ve been obsessed with miso soup using Explore Asian Soybean Spaghetti lately.
So simple to throw together with whatever fresh veggies are on hand and ready in minutes in a wok!
I also used Follow Your Heart’s VeganEgg to create a delicious brown rice veggie dish with spinach and carrots.
I made a huge salad with chopped apple and carrot miso dressing for a simple lunch.
And had the leftovers topped with black beans and nutritional yeast the next day.
Instead of going out Friday, we did a take out vegan pizza loaded with artichoke hearts, black olives, and colorful veggies.
I think this is my favorite type of vegan pizza, no fake vegan cheese or meat – just lots of fresh veggies with red pepper flakes.
And stopped by Grocery Outlet after the gym yesterday of course, but I didn’t get into too much trouble this time. I tried Lemon Ginger Humm Kombucha for a good price.
Nice little kick with a bright ginger flavor – tasty!
And found great prices on Amy’s frozen vegan meals.
Great to have on hand in case it’s another crazy work week! Okay, the list!

I love the money saving eco-friendly tips! I’m always looking to save some $$. We kept our blinds and windows shut all last summer and out house was very cool :-) Worked like a charm!

Me too, I’m dream a lot about retiring early and opening an animal shelter! :-) Nice on the blinds, us too and have sun blocking screens for the back windows that take direct sun in the afternoon.

We love doing veggie pizza on Fridays too, I’m sort of in a funk lately too and don’t feel like going out. Red peppers on pizza is just the best! Enjoy your runs. Maybe I need to exercise today to improve my mood =)

Veggie pizzas are great, so much flavor and texture without grease! Getting outdoors always helps me, I will be bummed having to due more treadmill runs with the too hot summer months and my work schedule.

Now that is my kinda slice, too- Thin crust and totally loaded with veggie goodness! I used to do pizza Fridays with my folks when I lived at home, and I really do miss the ritual. My dad makes the best pizza crust from scratch.
