It’s been raining pretty consistently for the last few days here which is great for California! Except not for the pups who are bored of being inside, but hate going outside. Poor Miko has been a little frustrated being stuck inside.
Smokey is perfectly happy to bury herself in her favorite couch blanket in this weather.
And I am perfectly happy to enjoy salads even when it’s cool and rainy. I got a large bunch of parsley in our last farm box that I need to use up and decided to try it in a dressing. While searching for inspiration, I found a simple parsley sauce recipe that seems to be popular in the UK. It’s also loaded with flour, butter, and milk which isn’t my idea of a simple sauce celebrating such a great fresh herb. So I created a creamy version getting it’s creamy and tangy texture from hemp seeds and apple cider vinegar.
Creamy Parsley Dressing
- ¼ cup shelled hemp seeds
- 4 tbsp. chopped fresh parsley
- 2 tbsp. apple cider vinegar
- 2 tbsp. nutritional yeast
- ¼ cup water, as needed
- Salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.
I coated a romaine salad with white beans and vegan bacon bits with the dressing and the vibrant green color complemented it nicely.
For a simple list of ingredients, a little bit of this dressing goes a long way in fresh and tangy herb flavor.

Parsley is probably my favorite but I also enjoy dill. I am a huge pickle fan so anything with that herb in it is usually a winner. I make an easy dressing with soy yogurt, noosh, onion salt and parsley flakes (I don’t have fresh) and it tastes really good. Thanks for the recipe :-)

Oh that sounds great too, I adore dill and have been using the liquid from homemade dill sauerkraut in dressings, so good!
