This weekend has been so great that I’m not ready to go back to work tomorrow. It’s been relaxing and productive. After a week of solid rain, the weed and grass growth in the yard has been insane. Literally one day, nothing, next day 3-foot-tall spiky weed is there! It was nice getting the front yard cleaned up and weeded and some work on the back before the rain starts up again today.
And we started the journey of finding a new refrigerator and may have found the perfect fridge. I am very picky about the water and ice dispenser on the front since I’m always filling up running bottles and huge thermos’ for running errands in the summer heat. It seems most fridges aren’t designed for that now, they just have flat paddles in the back of a small opening that can’t fit a bottle and it’s an awkward mess trying to fill one up. But not LG fridges, they have the water spout outside of the opening to accommodate any size bottle with the ice inside in a genius layered design. I was so excited testing it with a bottle and that it would be much easier to clean than our current dying fridge. Now we gotta decide exactly which model to buy and where to get the best price and I’m still bitter about our current fridge dying after only 10 years and just out of warranty.
Eats this week has been pretty exciting and colorful after a Trader Joe’s shopping trip and getting a farm box. Last Sunday hubby made a great post half marathon dinner for me of beans, rice, and Tofurky sausage that was very filling and hearty.
I had a salad with pumpkin seeds and hummus dressing and steamed butternut squash for lunch with my mom.
A huge dinner salad with crumbled veggie burger, organic greens, and creamy hemp seed dressing.
Very simple oil free tempeh stir fry with purple cauliflower and broccoli after a busy day and gym workout.
Large kale salad with beans and more hummus dressing.
Tempeh tamari stir fry using up beet greens from our farm box.
Frozen grapes for a fun dessert.
Of course spicy Thai cashew tofu from our favorite local Thai restaurant.
Simple salad with kicky avocado garlic dressing.
And a chickpea chard stir fry simmered with curry coconut milk.
It’s been a delicious and vibrant week! And I’m heading out for a tapered long run before another half marathon next weekend. Why not multiple races for the training of one? If everything goes well recovering from next weekend’s race too, I might do another local half marathon two weeks after that. I’m thinking getting used to longer distances regularly will really help for marathon training later this year, we’ll see! First, the list!

Sounds like a great weekend! I’ve tried so many vegan dog food brands and my dogs refuse to eat them. Gizmo is older and he won’t eat hard food, and Coco has no excuse, except that she’s picky. They love raw carrots and sweet potatoes, but not if it’s in their actual dog food. How did you transition your dogs?

It’s tricky with my dogs too since smaller dogs tend to be very picky about dry food and V-dog is a larger kibble. I mix it with a little warm water or veggie broth to soften the kibble for them and transitioned by mixing the kibble with smaller amounts of the wet food and warm water.

Yes, I’ve done that. I’ve mixed it with warm broth and water. They eat their wet food, leave the moist dry food, and turn and look at me with disgust and walk away. I did that for over a week and they wouldn’t touch it. Then I tried just giving them the moistened dry food and they wouldn’t eat it. I wish they’d help me out because I can’t stand buying them food with animal products, and the smell makes me gag. I have to hold my breath when I fill their dishes and then walk away to take a deep breath.
