Happy Sunday! It’s been a great weekend here so far, productive at home creating recipes and doing a little cleaning out for the new year. I’m really looking forward to SacTown VegFest later this month and excited the local Sacramento Vegetarian Society is taking control of the event.
I got to help out a little this year with graphics, but hoping to continue making it a bigger event in the future years.
With the chilly and rainy weather, Miko has been happy to toast his tummy in front of the fireplace.
And claim the fresh warm couch blanket with Smokey when I pulled it out of the dryer.
Both dogs had a bad day Friday since I took them to the vet for annual checkups and shots.
They do not enjoy those trips, the commotion in the waiting room with other cats and dogs, getting stuck with needles, and getting they’re nails trimmed – very traumatic. Leela is stuck taking an antibiotic for a week before her scheduled teeth cleaning later this month, poor girl!
I’ve been having fun wearing my collection of vegan shirts and tank tops to the gym and so far have not received any negative comments on them.
Think I want this one next, or this one.
I also took hubby to Baagan for lunch and got my favorite Chana Wrap.
A hearty wrap with a creamy and kicky green sauce, loads of veggies, and chana chickpeas – yum!
And headed to a local sushi place for dinner where the chef made us a custom fun plate of veggie sushi.
My eats were kind of all over the map this week starting with the rice and veggie stir fry with coconut milk and spicy curry paste.
Leftover soybean pasta, mushroom marinara, and steamed kale.
Hubby did a little kitchen experimenting and created fun BBQ tempeh strips.
Baked butternut squash and salad with beans and ginger miso dressing.
Curry stir fry leftovers and vegetable saute leftovers.
I was addicted to curry this week because I created another oil free curry stir fry with tempeh, tomatoes, carrots, and kale.
I am developing a love affair with Grocery Outlet since there is one close to us and I always find fun, high quality vegan goodies to try for cheap when I pop in for a few minutes here and there. It’s not the kind of grocery store you can do regular shopping at because they just don’t have the selection, but I scored a lot of fun stuff for $30 yesterday including non-GMO vegan Naan Chips, 3 boxes of gluten free chia flax cereal for 97 cents each, organic peanut powder with chia seeds that was delicious in my smoothie this morning, a couple containers of cheap Silk Almond Nog, a few packages of organic frozen strawberries, veggie chips, cheap Califia Almond Coffee Creamer, Kashi Organic Cocoa Coconut granola, a huge bag of avocados, and and couple of bottles of vegan-friendly Cline Cellars Zinfandel for about half of what I pay for it at Trader Joe’s – score!
Our pantry is stocked now and good thing I picked up the wine because I got a text from my sister inviting us over for social happy hour with family.
Which turned into a casual pizza dinner where we got a loaded takeout vegan veggie pizza with pineapple – tasty!
Whew, been a great weekend so far and it’s not raining currently for an outdoor run, nice. But first the list!
The Vegan Zombie posted the video of the Vegan Black Metal Chef’s Kitchen demonstration from the Vegan Vacation At Sea and it’s an entertaining watch that’s just under an hour.
Vogue posted the 7 best vegan leather handbags and some are actually reasonably priced!
The first running mile, or first few minutes of working out, always suck while warming up. But it’s worth it to suck it up and keep moving.
These vegan comfort dishes are worth a trip to NYC.
What a transition this guy made to address some frustrating health problems.
6 foods that should always be eaten raw, 3 of them can be tough on the digestive system raw!
Encouraging news video on a plant based life style and how far it’s come.
Same for this entertaining list about being vegan in 90s, thank you early vegans for making it so much better today!
Tesla finally offers a luxury vegan alternative to leather, about time!
Wow! LOVE all the pics (food & puppies!). My fluffballs can’t get enough of the fireplace either. Rough life :)
I’m also 1 – jealous that your husband cooks, and 2 – jealous that you have a veg fest in the middle of winter! I have a few friends that live there (all IT people too) and shared it with the.
Aw, thanks! Agreed on the fur kids, but we’ve been lazy today too since it’s been raining most of the day. :-) That’s great, I hope your friends can make it to VegFest!
Great post! So many inspiring links. We had such a similar week. I had to take my little fur babies to get their nails trimmed on Friday. They were not happy. And Friday night my husband and I met Alex and her boyfriend for vegan sushi at a cute new restaurant in her neighborhood. We didn’t have rain, but the temps were in the single digits, so lots of snuggle time with the dogs. :)
That veggie pizza looks like the best food I’ve seen in a long time! And the butternut squash not far behind. My mom just gave me 3 spagetthi squash, yikes, I’d better use them quick. And I have a turban squash but I’m not sure how I want to cook it. Have you tried those? Do you like them? And on top of all, I got a spiralizer so I’ve been going to town with it =) Happy Tuesday!
Score on the butternut squashes! I have not tried a turban squash, but I’m looking forward to hearing what you think! Spiralizers are so much fun, I’m looking for one that works well with carrots since the current one I have does not.
