I am finally recovering from the flu nightmare and had a decent run at the gym tonight that was needed! I can still feel my lungs recovering and cough is still hanging around a bit, but it’s slowly going away. I read a cough can hang around for weeks after a flu while the lungs and airways heal – ugh.
El Nino storms have been hitting hard here the last 3 days with chilly winds and rain, so it’s been getting a little crowded in front of the fireplace to stay warm.
Miko even leaves his toys there to warm them up.
A little wind and rain isn’t going to stop me from enjoying a hearty dinner salad, especially one with a tangy and creamy herb hemp salad dressing, kale, and chickpeas. This dressing recipe may have a hearty list of ingredients, but it has a hearty flavor and texture also for a satisfying meal salad.
Creamy Herb Dressing
- 2 tbsp. apple cider vinegar
- 1 tbsp. Dijon mustard
- ½ cup hemp seeds
- 1 tsp. dill
- 1 tbsp. miso paste
- 1 clove of garlic
- ½ tsp dried basil
- ½ tsp. dried oregano
- ½ cup water as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 4 servings.

I think you nailed it with this dressing ~ especially since you are still recovering. Apple cider vinegar is my go-to when sick. Love this!!!! Glad you are feeling a bit better. And exercise is supposed to help too! Whatever works!

Thanks and so thankful to be better after that ordeal! I think exercise does help open the airways and keeps things flowing, but it’s tough when my respiratory system is a little inflamed.
