Whew, happy Friday eve! Popping in with a quick recipe because it’s been a busy week! We’re still going through a lot of corn here, I love that the fresh stuff is in season and cheap and I got more in the farm box. I decided to use it in a fresh, BBQ themed salad. But what I found in creating this recipe is no two BBQ sauce recipes are alike! There is a huge range in flavors and ingredients! Unfortunately a lot of the recipes also include lots of sugar and oddly processed ingredients. For me a slight sweetness with a tangy chili kick makes BBQ sauce and this recipe gets is sweetness from a banana and a very ripe tomato blended with tangy apple cider vinegar.
Sweet BBQ Dressing
- 1 medium tomato, chopped
- 1 banana, peeled and chopped
- 1 small clove of garlic
- 1 tsp. Dijon mustard
- 1 tsp. onion powder
- 1 tsp. chili powder
- 2 tbsp. apple cider vinegar
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.
The color is a pretty, mild pink with a creamy, almost yogurt-like texture.
I added chopped apple and hemp seeds to the salad for a hearty savory and sweet meal salad.
The flavor of the dressing is a sweet BBQ flavor that’s tangy, but does not have a harsh, vinegary bite and paired nicely with corn and apple.
After we had to share dessert with our sweet fan club.

Thanks and it came out good for such a simple ingredient list. You could add sun dried tomatoes for a stronger tomato flavor also.
