Whew, almost done with the triple digit heat days here for a bit! Smokey chooses to snooze inside and enjoy the air conditioning.
Can’t blame her, I guess spending the days in an air-conditioned office isn’t so bad either. And Miko is happy to spend indoor cuddle time with hubby.
I’m still into cooling, summer salads in this heat and strawberry is such a wonderful summer flavor, bright, sweet, and blends so well with tangy balsamic vinegar. This dressing is another celebration of summer with a vibrant, poppy flavor.
Strawberry Balsamic Dressing
- 2/3 cup sliced strawberries (fresh or frozen)
- 1/4 cup shelled hemp seeds
- 1/4 cup balsamic vinegar
- 1 tsp. onion powder
- 1/2 tsp. dried thyme
- 2 tsp. Dijon mustard
- 1/2 cup water
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.
The dressing is a beautiful pink color, almost looks like a strawberry margarita.
I topped the salad with smokey seasoning and nutritional yeast and served with chilled watermelon for a perfect summer dinner.
It has a strong sweet and tangy flavor depth that separates this from just-another-salad.
And beautiful vibrant colors.
