Spring is starting to show up here, I spent some time admiring our blooming tree in the backyard with a beautiful sunset.
And Miko was not happy with me for forgetting to let him out too, oops!
Yes, that is a holiday mat. So what? :-) We have not bought new ones for spring yet. What’s wrong with a little Christmas cheer year round? My neighbors have no problem leaving their lights up.
I do have a problem finding new ways to enjoy raw broccoli, it pretty much has to be pureed into a soup or sauce to make it easier on the digestive system. And this soup does that blending it with avocado and the slight sweetness of banana, both much better on the digestive system and works well with the texture of pureed broccoli. So does a mild curry flavor with a ginger zing.
Sweet Broccoli Curry Soup
- 1 avocado, seeded and scooped
- 1 cup of chopped broccoli
- 1 banana, chopped
- 3/4 tsp. curry powder
- 1 tsp. miso paste
- 1/2″ thick chunk of raw ginger
- 1 small clove of garlic
- 1 tsp. dried cilantro
- 3/4 cup of water
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2 servings.
The texture is very thick and hearty, great for me and could almost be a dip too.
I paired it with a simple kale and pumpkin seed salad.
And really enjoyed the flavor and texture of this soup, hearty and filling with a sweet curry ginger zing that was not too strong.

I would make thicken that soup and turn it into a dip. Looks delicious!
