Leela is not a happy camper after her vet appointment yesterday.
Her sniffling cold has been hanging around for the last week, so to the vet she went to find out why. Turns out she has a sinus infection, got a shot, and has to take 4 pills a day for awhile now. Poor girl!
Miko is doing just fine and enjoying couch time with hubby.
I enjoyed this raw vegan soup I threw together, it’s a simple recipe for one that comes together fast and includes two of my favorite super foods – hemp seeds and ginger. It also has just the right amount of curry and sweetness from a banana to make it a sweet and savory treat with kick that isn’t overpowering.
Curry Ginger Banana Soup
- ¼ cup shelled hemp seeds
- ½” thick chunk of raw ginger
- 1/2 tsp. curry powder
- 1 carrot, chopped
- 1 banana, chopped
- ½ tsp. onion powder
- 1 tsp. apple cider vinegar
- ½ cup water, as needed
- salt and pepper to taste
Place all ingredients into a blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 1 serving.
The texture is silky smooth with a warming curry orange.
It paired perfectly with a massaged kale salad.
The flavor and texture on this soup works well, curry and ginger are present, but not overpowering and it has a sweet and tangy zing for a lot of flavor depth.
