I did something I usually don’t do for dinner last night – grabbed fast food. Chipotle actually because I wanted to support the Sofritas tofu promotion where you get to come back for a free menu item over the next month if you order a menu item with Sofritas. I ordered mine over the mobile app for pickup after work because I’m not a fan of waiting in long lines and the app is pretty slick, you can order, pay, and set your pickup time. Plus it remembers past orders if you want to order it again. Nice!
I got the Sofritas tofu burrito bowl holding the rice and loaded with black beans and veggies.
I gotta say it was tasty and surprisingly spicy! Next time I’ll add guacamole I think, but this was a very filling dish with a lot of kicky flavor. And it’s a positive change to see a fast food chain offering and promoting a healthier vegan option!

I’m also still playing with NuNaturals NuStevia Cocoa Mint Syrup here using it in simple, decadent, and low calorie recipes.
This one is super simple and great in coffee, smoothies, and banana soft serve. For homemade nut/seed milk, hemp milk is my favorite because it’s so simple and does not require straining out the pulp like almond milk, easy for me to whip up on a weeknight after a long day. And it has a thicker and creamier texture for coffee.
Cocoa Mint Hemp Milk
- 1/4 cup NuNaturals NuStevia Cocoa Mint Syrup
- 1 cup shelled hemp seeds
- 4 cups water
Place all ingredients into a high speed blender and blend on high for about 3 minutes, until milk texture is creamy and frothy. Enjoy! Makes 4 servings.
Simple list of ingredients, right? Hemp seeds aren’t the easiest to find locally, but it’s gotten better here in the last year – Costco now carries them and I saw a small bag at Target last weekend! I like this whopping 5 lb. bag of organic Nutiva hemp seed from Amazon because I can store it in the freezer and it lasts me for months. Plus it’s eligible for Subscribe & Save to save more money on regular shipments.
And so great to have on hand for making regular batches of hemp milk and other raw recipes.
This cocoa mint hemp milk has a mildly sweet chocolate mint flavor that’s not too strong or too minty, great for smoothies and my new favorite for coffee.

WOW, what an amazing idea for a tasty cup of hemp milk. I like to make hemp milk with hemp seed butter. It blends easier and has a better texture than hulled hemp seeds. Thank you for taking the time to create and posting this fun recipe.

I love Chipotle Sofritas bowl! It really is spicy, which is why I like it so much. I’ve never made hemp milk, but I put the seeds in my morning smoothie. This is so easy, I’m going to make some tomorrow for my coffee. Thanks Christine!
