I am back home from the tech conference in the bay area and it is so nice to be back! We left at about 3:30pm on Friday to start the drive home and I got home around 6:30pm after dropping off my co-worker. Can’t complain about that when we were expecting traffic to be much worse! I’m very thankful the trip went well, we had no problems on the drive, etc. It’s one thing when I’m driving just myself, another when I’m driving a co-worker also and I just wanted everything to go well and be safe, thankfully it did.
The final day of the conference went well, a lot of information to take in from the sessions and great people watching. I’ve been working in IT for a long time now and have been to many tech conferences. It’s a guy-heavy world still, not a lot of women at the conferences and one of the few events where there’s a line for the men’s restroom and not the women’s! Gotta enjoy that when we can!
This conference was held at a newly renovated conference center where I was really digging the clean, modern, urban decor with cement walls, modern communal sitting areas, and these huge Jenga games.
Really noisy when they fell over!
I really liked the communal dining tables, clean, bar-height wood tables with beautiful wood stools.
Hurry up and make a cheaper home version, Ikea!
Lunch on day 2 was pretty amazing also – stuffed butternut squash with lentils, veggies, beans, and tofu, nutty rice, and more steamed veggies.
I was very full after that and went for a walk outside during the rest of the lunch break to get some fresh air and exercise before sitting through more sessions.
Our fridge was pretty empty when I got home, I still need to make a shopping trip to restock. So I got creative for lunch using what we had with this simple tofu salad with carrots, apples, and chopped green onions dressing with a little apple cider vinegar, garlic powder, and salt and pepper.
And took the dogs for a long walk since I owed them after being gone for a few days.
But dinner I was craving getting back into high-raw healthy mode after all the rich eating and threw together a simple kale salad with this simple curry hemp seed dressing.
Simple Gooey Curry Dressing
- 1/2 cup shelled hemp seeds (or raw sunflower seeds)
- 1 banana
- 1 tbsp. curry powder
- 1 tsp. onion powder
- 1 small clove of garlic
- 2 tbsp. apple cider vinegar
- 1/2 cup water
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes 4 servings.
The color of the dressing is beautifully warm.
And the creamy texture coated raw kale leaves nicely with a sweet and slightly punchy curry flavor.
Simple and light dinner with a lot of flavor, perfect after a few days of rich foods!

I know what you mean about it being ‘guy heavy’ still LOL – Radio is getting better, I have to admit. Since I’m in a VO network with MANY radio clusters around the US (and many other countries) I have noticed more and more females which is AWESOME :) I hope things continue to gain in the IT world :)
We just have to keep-on keepin’-on, eh!?

I thought of you on Saturday because we had to say goodbye to our beautiful 13 and 1/2 year old Lab, Guinness. I haven’t worn mascara in three days because I would just cry it off. I hope you’re feeling better.

Thanks on the food, I was very impressed with the vegan options offered. The catering chef even confirmed the options with me at the conference and followed up to make sure they were good.
