What a week and weekend so far. This is a busy month for me with lots going on at work and the weekends and that’s all good. Hubby and I celebrated our dating anniversary yesterday with fun little gifts, like this cute little 8Bitdo NES30 Bluetooth game controller for my iPad.
And stepped out for a nice dinner at The Chef’s Table were they never have a problem creating custom vegan dishes for me when the menu is lacking options.
I started with crispy rice and corn cakes drizzled with a spicy sauce that had an amazing texture and flavor.
And had a nice butternut kale risotto dish for my main course, very smooth, savory, and filling.
This morning I hit the gym early for a light workout because I didn’t want to overdo it before the half marathon tomorrow.
Then Baagan for a nice lunch between running errands and got the walnut carrot sushi with creamy ginger dressing, yum!
I needed that before facing Costco on a Saturday! As expected, it was slammed! But it was okay since I wasn’t in a hurry and had to face it for more kale and protein powder.
Tonight’s dinner was a pretty simple quinoa dish, filling and energizing for tomorrow’s race, but not exotic to avoid, uh, tummy troubles. I simmered a blob of miso paste in water.
And added quinoa, veggies, dried basil, lemon pepper, oregano, garlic powder, and onion powder to come up with a hearty, free-handed quinoa stew.
While Miko begged for chopped carrot scraps.
It was a hearty and filling dish that hopefully will prove to be good fuel for tomorrow!
I expect to be a half asleep zombie at the crack of dawn tomorrow, so I laid out everything for the race.
And will hopefully be back tomorrow, or Monday, with race details!

I hope your race went well! The ‘eats’ look great! I should take more pics of the cart while shopping!!! I’m going to be a bit of a blogging fool again this week because I’m still WAY BEHIND :)

Oh! AND…the Nintendo Gadget Controller looks awesome! Instead of Miso I have been using SeaClear as of late :) I bet you’d like that!

Haha! I love that you and your husband celebrate your first date anniversary. My husband and I will be celebrating our 35th first date anniversary in January!!! We’re not THAT old, just high school sweethearts. :)
That risotto looks amazing! I made a butternut squash risotto today and I can’t wait for dinner.
I hope you had a good run! Alex and I ran the Women Rock 1/2 marathon two weeks ago and had a blast.

It’s a fun excuse for more celebrating. :-) Congrats on your race, they are fun and I’m already thinking about the next race. May even do the CIM Relay again after last year’s crazy freezing temps. :-P
