Darn, another weekend disappeared too fast! It was a fun, but busy weekend! And a weekend full of rich eating, whew! It started on Friday when hubby and I went to Baagan for lunch to try this week’s trio plate.
It was pretty amazing with scallion sweet potato pancakes, coconut chili brown rice, and orange ginger salad.
Then we went out to dinner that night to The Porch Restaurant and Bar because they are participating in the Sacramento Vegan Chef Challenge this month. Their menu just looked too good to pass up with a unique boiled peanuts appetizer, Frito pie, and vegan chocolate cake with mint ice “cream”.
Yeah, our eating out budget gets a little stretched during October, but it’s worth it! The boiled peanuts appetizer was very unique with thick house made sea salt crackers and tangy pickled veggies to stack.
One of my food weaknesses is corn chips – Fritos, tortilla chips, etc. Something amazing about the simple salty and crunchy corn flavor that is so addicting. So I splurged and ordered the Frito Pie as my main course and it was very filling with black eyed peas, avocado, and vegan sour cream.
Of course I saved room for dessert and this is a rare treat for me. But how could we turn down vegan chocolate cake? Especially with chocolate mint ice cream, my favorite!
And it was also great. The cake was maybe a little dry, but the ice cream and strawberries made up for it.
Good thing I got double workouts on Saturday. Hubby and I hit the gym early, then headed to my niece’s birthday party at SkyZone in the afternoon where the adults got to act like kids too bouncing on the massive trampolines. And it was a good opportunity to have a little fun with the Hyperlapse app.
After we headed to my sisters house for a home made pizza party where I threw together this tasty creation with peppers, onion, tomato sauce, and nutritional yeast.
Simple and filling!
Yesterday I spent a few hours at the Sacramento Auto Show volunteering for SacEV to educate and answer questions on owning an electric car.
I didn’t have to put my car on display this time, it was for new EVs only. Tesla, the BMW i3, and the Smart Electric seemed to be the most popular models at the show, a lot of people interested in the small Smart car and why not for $139 and no gas bills? It looks so fun and free-spirited, while being simple and un-cluttered. And it’s even cheaper after the California Clean Air rebate.
I had a little time to explore the rest of the show too. Toyota had their fuel cell concept there and eh, could be a long time before these go mainstream.
And Monday started nice and early for me with my on call work phone waking me up before my alarm, the nerve! It was a busy day at work, so it was a pleasant and sweet surprise to find hubby making vegan chili for dinner when I got home. He used Beyond Meat Beefy Crumbles and pureed organic kale into the sauce using to Vitamix!
It smelled wonderful!
And he had Daiya Cheddar Shreds and chopped onion ready for serving.
It was hearty, filling, and had a nice little spicy kick. Such a wonderful way to end Monday!
Yeah, I’m a lucky gal. :-) But will be eating salads for the rest of the week I think!
And Shadow is still hanging in there, eating and seems to have a decent amount of energy. But still scary skinny too. It’s sad to watch him decline, but we’re gonna keep him as comfortable and happy for as long as we can.

I soooo need to get more canned items for my pantry…I have been going thru a lot of them lately. One thing I have a lot of to USE is vegetarian baked beans and I’m trying to think of something to do with all them instead of just having them as a side.
All the food look YUMMY – I’m jealous of your local options! LOL – The car show sounds FUN!!!!!!
