Farmer’s Market Finds

Yesterday was a lazy day here with temps in the triple digits, that’s just too hot to spend much time outside! I got a morning run in and a little yard work done before things got ugly, but then we just hung around inside. Skipper was very happy to pass out on his cool hammock bed all day, so comfy he snored most of the day and shed more fur on it.

I seriously need to vacuum him!

The chihuahuas were a little bored and frustrated with me, they wanted walks and didn’t understand why we couldn’t in the heat.

Smokey hung around all day too just staring at us…

IMG_5617I swear she’s just gonna start talking one day.

I’ve been having a lot of salads and smoothies in this heat, exciting I know.

But this plate I had over at a casual family gathering Saturday was pretty exciting.

Because hubby and I made a trip to the farmer’s market Saturday and grabbed most of the ingredients for it. I whipped up a tasty massaged kale salad with heirloom tomatoes, cucumbers, and carrots coated with hemp dill dressing and paired with steamed corn and a great vegan potato salad my mom whipped up. Again, the prettiest plate there.

I also scored this huge artichoke and unique eggplants that we steamed and roasted for dinner last night.

Hubby did a great job on baking the eggplant slices, very flavorful and not greasy.

And tonight I used the farmer’s market cauliflower in a curry lentil stew.

Yeah, it was another triple digit heat day and I made hot stew, not sure why I was craving it either! But it came out great seasoned with curry, dill, cayenne, oregano, garlic powder, and onion salt.

The heat is brutal here now, it was 111 degrees for the drive home from work today. I was gonna go grocery shopping after work, but I just wasn’t feeling it in the heat! It can wait until it’s cooler later this week. How’s your weather? Cooler? Trade ya?

    The salad and cauliflower lentil stew looks amazing! Love your dogs too. I have a chihuahua mix and a lab and I’m contemplating rescuing another chihuahua from the shelter I volunteer for. Am I crazy?!

      Thanks! And not crazy at all, I would have a house full of rescued pups if I could!
