Tomorrow is Friday, thank goodness. It’s been a week of worry and sinus issues here. Shadow, one of our sweet gray kitties, is having health issues.
We noticed he’s been losing weight and having intestinal issues and took him into the vet this week to find out it’s either thyroid issues or feline leukemia. The thought of the later is horrifying, but he’s on a lot of pills this week and will go back for a follow up next week. We adopted him over 14 years ago and he’s been a part of our family since moving from apartment to house and across the country with us. So we’ve been trying to stay positive and make sure he’s happy this week.
Partly from worrying about him and post nasal drip, my insides have not been happy this week. And soup is awesome for that, especially when it’s using gorgeous, whole ingredients and is simple to make. I needed to use up these little potatoes we got in our farm box and decided to create a simple version of creamy broccoli soup that came out nicely.
Simple Potato Broccoli Soup
- 2 cups chopped potatoes
- 1 cup chopped broccoli
- 1/4 cup nutritional yeast
- 1 tsp. salt
- pepper to taste
- 1 tbsp. seasoning blend of choice (I used Trader Joe’s Everyday Seasoning)
- 2 cups water
Bring water, potatoes, and broccoli to a boil. Reduce heat to a simmer and stir in the rest of the ingredients. Cover and simmer for about 20 minutes. Use a potato masher or immersion blender to blend ingredients together, or enjoy chunky. Serve and enjoy, makes 2-4 servings.
I used a potato masher to blend in the big chunks, but still leave it chunky.
The soup came out wonderfully, creamy, rich, and soothing with a savory potato flavor.
Perfectly simple and comforting recipe when things get complicated.

Just wanted to tell you that I have been through the same thing with my, now, 14 yo orange boy. We had a scare about 2 years ago with him losing weight and not eating. It went away as quickly as it popped up and we never figured out why (he was tested for all possible issues). Then one year later he started losing weight while eating all the time. That was very scary but it was quickly diagnosed as hyperthyroid which is very easy to control. Our thoughts are with you, Shadow and your family.

I started trying to catch up on your blog from the most recent and noticed one of your cats was sick so I wanted to start back to see what was up.
