Boo, the weekend is over and how did that happen so quick? I’m not sure I’m ready to face this week at work after last week and a fun weekend. Sigh. Easter was very chill here, I went for a run, then church, and had a relaxing evening at home with hubby. Maybe a little too quiet, but nice before the work chaos starts up again. Coming home to a sweet hubby and happy dogs helps after a crazy day. Miko was so excited this evening that he just waited by the back door with his toy for me when I let him out to pee.
Such a little sweetheart! And I really need to clean that door apparently…
Just a quick recipe post tonight, I had some good luck in the kitchen with this avocado-based dressing.
Creamy Lemon Balsamic Dressing
- 1 avocado, seeded and scooped
- 2 tbsp. balsamic vinegar
- 1 tbsp. lemon juice
- 2 tsp. Dijon mustard
- 1/2 tsp. salt
- 1 tsp. agave nectar or stevia
- 1/4 cup of water
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes 4 servings.
The color is a little iffy looking, avocado and balsamic seem to make an interesting greenish brown together. But they sure taste good!
The dressing has a lot of tangy and poppy flavor from the balsamic and Dijon, perfect way to zing up a plain arugula salad.
The creamy texture coats the salad evenly adding a silkiness to the crunchy veggies.
Now I need to motivate myself for a workout and maybe a glass of wine!
