Santa Came Early & Simple Sauce

After a busy day at work yesterday, I came home to a fun surprise from hubby – early Christmas!

A new iPad Air! I’m so excited because this is my first iPad! I use a work iPad for work stuff only and a cruddy work retired rooted Android tablet for personal stuff that’s slow as snail snot, so this was an awesome surprise! This picture does not do the screen justice, it’s gorgeous and while being so light it almost feels delicate.

I am a spoiled and lucky girl! :-) Words can’t express how screaming fast it is, just wow. Especially compared to my old tablet. I’ve been having too much fun playing and tinkering with it, Candy Crush and Plants vs. Zombies 2 is much more fun on the bigger screen. :-) Because it’s such a new tablet, there aren’t a lot of case options for it yet. I like the style of the new Apple Smart Case, but bummed it uses leather and won’t buy it. I’m a fan of Speck cases, but the SmartShell is not out yet, boo. I picked up a Targus case from Best Buy that I have luke warm feelings about and probably won’t keep because it’s bulky, we’ll see.

I did manage to make time for a new recipe with all the iPad excitement, a versatile sauce that worked with multiple dishes.

Creamy Ginger Sauce

  • 2 tbsp. shelled hemp seeds
  • 2 tbsp. tahini
  • 2 tbsp. tamari
  • 1 clove of garlic
  • 1″ thick chunk of fresh ginger
  • 1 tsp. dried cilantro or 1 tbsp. fresh minced
  • 1/2 cup water

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve as a sauce, dressing, or dip. Makes 4 servings.

Last night I served the sauce over a simple dish hubby made of lentils, broccoli, and peas.

It added a powerful tangy gingery garlic taste with a creamy texture.

I used it to top a tempeh kale salad for a work lunch today with a sprinkle of smokey seasoning and it added a lot of zing.

And it would also make a great dip for veggie sticks or even a spread.
