We’re really starting to embrace fall here, the chihuahuas have started burrowing into blankets for the cooler weather. Miko was so comfy in his pink blanket, he dragged it away from his bed when it was time to go outside.
Skipper has been embracing relax time wedging himself into pillows.
And chihuahua beds.
I’m embracing more fall flavors with this simple curried soup inspired by fresh apples delivered in our farm box.
Curried Apple Soup
- 1 apple, cored and chopped
- 1/4 cup shelled hemp seeds
- 1/2 tsp. onion powder
- 1/2 tsp. thyme
- 1/2 tsp. curry powder
- 1/2 tsp. salt
- 1/2 cup of water
Place all ingredients into a high speed blender and blend to a smooth and creamy soup. Serve and enjoy. Makes 1 serving.
The ingredients come together in minutes to create a creamy soup, perfect after a busy day.
And it looks pretty topped with a little parsley.
For a simple list of ingredients, it has a lot of flavor depth with a playful sweetness from the apple, but savory, warm, and slightly spicy kick from the seasonings for a great fall combo.
