Skipper is doing good on his new higher does of insulin, very content to eat everything in sight and happier with the cooler fall weather for sleeping outside in his doghouse.
He eats a large breakfast in the morning before his insulin shot and a large dinner before his evening shot, but he could eat a lot more! I still think he’s making up for lost time and is very obsessed with food from being a wandering stray for who knows how long, poor guy. He also seems to have more energy lately, very happy to see us when we get home and does a little happy dance.
I’ll do a happy dance when this week is over, half marathon training, busy work days, and keeping busy at home is catching up with me at bit. But hey, it’s halfway over. And I created another hemp seed dressing that’s tangy and bright.
Balsamic Rosemary Hemp Dressing
- 1/3 cup shelled hemp seeds
- 1/4 cup balsamic vinegar
- 1 small clove of garlic
- 1 tbsp. fresh rosemary
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 cup water
Place all ingredients into a blender and blend to a smooth and creamy texture. Makes 4 servings.
I just love the smell of fresh rosemary, especially paired with balsamic vinegar.
The texture is a little more runny compared to some of my other dressings, but it’s full of tangy flavor and coats kale leaves nicely.
And great topped with cheesy nutritional flakes.

Thanks, us too! His insulin dose has been increased to up to 4 units a day which is a lot for a dog his size, gonna need all the 1800PetMeds coupons I can get! :-)
