It’s Wednesday, right? Oh good, getting closer to Friday. It’s been a week of strange weather here, hard rain and temps in the 60s yesterday, back up to the 90s today and triple digit dry heat by Friday! That’s okay with Miko, he’s just happy the rain and wind are done and has been in turbo play mode today.
I got inspired to be in turbo salad mode and use up the bunch of avocados I have that are, of course, all ripe at the same time. I created another salad dressing with one using balsamic vinegar, one of my favorite flavors. But I added a sweet and tangy punch to this one that worked out great!
Sweet Balsamic Dressing
- 1 avocado, seeded and scooped
- 1/4 cup balsamic vinegar
- 3 pitted medjool dates
- 1/4 tsp. salt
- 1 clove of garlic
- 1/2 tsp. Dijon mustard
- 1/2 cup water
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Coat a large salad in the dressing, or use as a dip or spread. Makes 4 servings.
Okay, so the color is a little odd looking, but the flavor is just perfect with a sweet balsamic kick.
The thick and creamy texture is perfect for coating a crisp salad.
I topped a large serving with nutritional yeast and hemp seeds to make it a meal perfect for the hot weather.
The strong tangy and sweet flavor of this dressing spreads out over a large salad nicely adding zing.

We’ve had some storms this week and Paco has been pretty quiet but last night he made up for it too! I think the ‘puppy’ is slowing ‘moving on’ from him!

Tasty dressing! You should come link it up to Raw Foods Thursdays this week! I love how versatile it is. I wonder how it would taste on kale chips. Yum!
