Savory Fennel Seed Dressing

I think Miko’s day was as crazy as mine, he stayed with my mom while I was at work and her cranky chihuahua who didn’t want to share the attention. And he got chased around by my two very active nieces. He was very ready for a little relaxing in hubby’s lap at the end of the day.

And I was ready for a little therapeutic time in the kitchen creating my latest salad dressing using more raw onions and the neglected jar of fennel seeds that was hiding in the back of our spice cabinet.

Savory Fennel Seed Dressing

  • 1/2 cup shelled hemp seeds (aka hemp hearts)
  • 1/2 tsp. fennel seed
  • 1 medium tomato, chopped
  • 2 tbsp. raw minced onion
  • 1 tsp. white miso paste
  • 2 tbsp. lemon juice
  • 1 small clove of garlic
  • 1/2 tsp. paprika
  • 1/2 cup of water, as needed

Place all ingredients into a high speed blended and blend to a smooth and creamy texture. Makes about 4 servings.

The flavor of this dressing a positive walk on the wild side with a savory spice, slight sweetness, and smooth and creamy texture.

And it coated a large kale cucumber salad nicely with a savory tang and spice.

And even better topped with nutritional yeast and a seasoning blend.

    Oooooh, I LOVE fennel! Such a yummy unusual flavor– love the idea of adding it to dressing!

      Thanks! A chili recipe inspired this dressing and the flavors make a great dressing.

    YUP! This one…I will have to try! I only have one onion left tho and it’s kind of funky! Today I posted about a Smoothie, a Special Treat with chocolate and coconut, my Green Sprout Kit – I even did a craft project to go along with it! As well as a few other things! The little Chi looks so cute, here, as always, too! Sweetie! Mine was a little terror last night until about 10 and then he finally fell asleep for about 20 minutes on my lap under a blanket! LOL
