It’s been a chilly day, just 25 degrees this morning and my poor garden was covered in frost.
It was a wonderfully relaxing morning cuddling with warm dogs, drinking coffee, and starting the day with a huge green smoothie and a good workout.
I’ve been having fun watching documentaries on Netflix during home workouts lately. I watched Revenge of the Electric Car last week, an interesting look at how far electric cars have come in the last few years and the impact that Tesla and the Nissan Leaf have had on the industry. Seems the future is going there for reducing emissions and fuel consumption, but there’s still a lot of room for improvement in range and charging time, very interesting stuff.
I also watched Fat Sick and Nearly Dead, a very interesting journey by Australian Joe Cross to go on a 60-day juice fast to lose weight, improve his health, and reduce dependency on prescription drugs. During his fast, he went on a road trip across the US interviewing people in various cities about their diet and making them fresh juice to try. It’s funny, interesting, and a little sad, but a worthy watch.
For lunch, hubby and I headed to Ikea to fuel up before shopping and I had a decent vegan meal from the Ikea cafe.
That’s actually BBQ sauce on my salad, there was no vegan dressing this time. And it turns out BBQ sauce is great on salads.
We also grabbed new throw pillows, floor mats, kitchen utensils, and these fun new lights for under the TV.
I’m not a fan of one obnoxiously bright light flooding a room, it makes the room feel small and too bright for me. So we have a few little, energy-efficient lights placed around living spaces to set the mood and Ikea always has a great selection of them for cheap.
For dinner, I threw together a huge salad for hubby and I to share.
And pressure cooked a mix of beans that were soaked overnight.
I tossed in frozen corn, curry powder, dried chives, salt, and pepper before pressure cooking on high for 6 minutes. I might have overdone the curry a bit, but the spice level was perfect for me.
Especially topped with Trader Joe’s vegan mozzarella shreds, a perfect and filling dinner on a chilly winter night.
I need a few more days like today, could we extend the weekend?
